CONTENTS
I love to cook. And I love to share food and recipes with friends and family. I enjoy trying out new ingredients, experimenting with flavors, spending time perfecting culinary techniques, and expanding my gourmet repertoire. But like most of us, I have those days when I dont want to fuss.
Even as a retiree, I still have those busy crunch times in my schedule when I cant fit in even a quick trip to the grocery store. And I know that for many who are on a limited budget, be they students or retirees or families trying to make ends meet, those final days of each month can be a challenge when trying to prepare delicious, satisfying meals with only the last length of a shoestring in the pocketbook. For me, having a well-stocked cupboard is second nature, a must in maintaining a food blog. I live in a rural area where there is no supermarket or convenience store nearby, so running around the corner to pick up a missing ingredient is never an option for me. Keeping your cupboard well stocked doesnt mean spending a fortune either. Two or three times per year, I load up at a big-box discount grocery in my area for all the essential shelf-stable items.
And I use my freezer to take advantage of sales on meat, poultry, butter, and frozen veggies. Friends and neighbors, some of whom use their Catskill houses as second homes for weekends and holidays, have often told me how much they appreciate my ready ideas for effortless meals served up in a jiffy. These are recipes that encourage relaxation, call for simple, nutritious ingredients, and say, Just kick back tonight and enjoy the Mountain View. So, for the busy, budget-minded, and everyday cook in need of a break from lengthy recipes and extensive food preparation, as well as for the rural chef, minimalist cabin dweller, and relaxed weekender, this book will come in handy. Here are over 100 out-of-the-cupboard recipes to please everyone at your table, all economical and made from supplies most people will already have availableno so-called fancy ingredients required. Making meals from convenient items is not haute cuisine, but it is a practical, fun, and easy way to enjoy tasty, nourishing food on your own or together with family and friends.
Many of the recipes in this book are fan favorites, the go-to comfort foods of choice for fellow readers of my blog. I hope they will become some of your favorites too.
