O f all the meals in a day, the breakfast table is probably the most familiar with Greek yogurt. Youd be hard-pressed to find someone who hasnt grabbed a container of yogurt on the way out the door in the morning, but Greek yogurts breakfast uses span way beyond the spoon.

When I first started eating healthier, one of my biggest struggles was getting in a nutritious breakfast every day. Sure, anyone can cook a healthy spread on a leisurely Sunday morning, but what about when the alarm didnt go off and you have five minutes to get out the door for work?

Ive developed a portfolio of healthy breakfast recipes that are both tasty and speedy. Youll find quite a few of those in the next few pages, along with some of my slower Sunday morning favorites.

This is the go-to pancake recipe in our house on Sunday mornings. These pancakes are packed with hearty whole grains, but stay light and fluffy thanks to the addition of Greek yogurt.

INGREDIENTS

1 1/4 cups whole wheat flour

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 cup plain Greek yogurt

1/2 cup unsweetened applesauce

3 eggs

1/4 cup maple syrup

1/2 teaspoon vanilla extract

1/3 cup milk

DIRECTIONS

Preheat a griddle or large nonstick skillet over medium-high heat. In a large mixing bowl,
mix together the flour, baking powder, cinnamon, nutmeg, and salt. In a small mixing bowl, whisk together the yogurt, applesauce, eggs, syrup, vanilla, and milk. Pour the liquid ingredients into the dry and mix until just combined. Let batter rest for 10 minutes.

Spoon 1/2 cup of the batter at a time onto the preheated griddle or skillet. Cook for 3 to 4 minutes, or until the edges of the pancake look solid, and bubbles begin to rise to the surface. Flip pancake and cook for 2 to 3 more minutes on the other side. Repeat with remaining batter.
