Are you one of those people whose idea of dieting is starving yourself all dayand then stuffing yourself with a great big salad at night? Have you tried this approach and been happy with the results? Of course not. Because without ever having met you, I know that even if you lost weight in the short term, you gained it all back. We just cant live on salad alone.

I know, because Ive been there myself. The Skinny Chicks program came out of my own need to get off the diet merry-go-round, to get fit and healthy and stop making myself crazy with food. I lived the life of eating salads during the day and bingeing on sweets at night. I guinea-pigged my way through every diet gimmick there was. I cycled through all the major diets: the Atkins diet, the grapefruit diet, the cabbage soup diet, the Mayo Clinic diet, the Sugar Busters diet, to name a few. I tried over-the-counter supplements and diet aids, Chinese herbs, and, at one point during my twenties, I even stooped to stealing my grandfathers prescription Lasix (a diuretic) to lose weight. When that didnt work, I paid someone to hypnotize me so I could get my eating under control. Needless to say, that didnt work eitherand I was out $100. I didnt know or care whether I lost water weight, muscle tissue, or fat. I only cared about making the numbers on the scale go down.

After I had exhausted every possible fad diet and weight loss trick, I finally gave up and looked up. I prayed for God to point me in the proper direction. Then I met a nutritionist who suggested I learn more about food and the body if I really wanted to understand how to lose weight. As many of my clients do today, I argued with my nutritionist. I was very emotional about food, and I wanted to cling to my habits. I basically wanted her seal of approval for my existing ways. It took a lot of persuasion for me to let go of the low-carb concept. But eventually I realized that even though my background was in modeling, fitness, and personal training, I didnt fundamentally understand what was preventing me from losing weight. I decided to get certified as a nutritionist, and there I found the answer to my prayers.

I learned that eating too little food would slow down my metabolism more and more; that eating too much would cause fat storage; and finally that eating to keep blood sugar levels stable was the key to avoiding sugar cravings and thus gaining the weight back.

It was difficult for me to accept these concepts. All I wanted to do was restrict carbs and calories and watch the scale magically drop 10 pounds in a week, as it had so many times before.

But somehow, it all finally clicked. I started to eat balanced meals such as low-fat cottage cheese mixed with fresh fruit and yogurt, topped with crunchy walnuts; bananapeanut butter smoothies; and pumpkin pancakes (all of these recipes are in this book), and I went from a size 12 to a size 5 in 3 months. Best of all I was eating real food, not diet food, and those insatiable cravings for sweets and salty carbs were virtually eliminated. I was so excited to be freed from the bondage of dieting that I vowed to get this message to all the people who were suffering just like me. It was one of the best things that ever happened to me.
