A DELE P UHN , M.S., C.N.S., has been a nutritional consultant for eighteen years with a thriving private practice both on the Upper East Side of New York and in Great Neck, Long Island. Her patients run the gamut from the rich and famous (who will not be mentioned here) to more ordinary folk.
She holds a M.S. in Medical Biology and Certificate in Clinical Nutrition, and she is a Certified Nutrition Specialist as conferred by the American College of Nutrition. She is a member of the Board of Dietetics and Nutrition. Recently appointed the nutritional advisor of Self-Help, an agency that helps the families of mothers with AIDS stay together, she is also a frequent lecturer at seminars and conferences, and has worked at various health centers and with school systems on Long Island. Her nutrition and weight loss research has made her a popular source for magazines, and her thoughts and ideas have appeared in Mirabella, Harpers Bazaar, and The Wall Street Journal.
She is also the author of Healing from the Inside, teaching how to restore body vitality, using foods, herbs and nutritional supplements. Ms. Puhn lives in the Kensington section of Great Neck, Long Island, with her husband. Her grown children frequently visitand none of them crave junk food when they do.

CONFESSIONS OF A FOOD SENSUALIST
My 5-Day Miracle Diet did not happen by accident. I did not conjure up the idea one night in my sleep and simply offer it to my clients the next morning. No. It took twenty years of experience, of trial and error, of exhaustive research and experimentation, of thought and forethought, for me to devise a plan that, even today, is being refined and defined to fit every individual situation.
It began at home, with my overweight mothers mixed signals. Dont eat too much or youll look like me, she would say as she brought home the cookies, the Danish pastry, and the freshly baked jam doughnuts. I might not have wanted to follow in the footsteps of my mother (or my diabetic father, for that matter), but at the same time I could not resist those tantalizing white bakery bags. The Green genes (my maiden name) had taken root long before I was a newborn babe. I was preordained to be a food sensualist. You might say I was born in a cookie box.
I began to eatand I did not stop until graduate school.
Oh, sure, I tried dietsone after another, like everyone else. Diet pills, Weight Watchers, Stillmans, Atkins, Schmatikinsyou name it and I did it. And I even had success; I lost weightfor a while. But soon my sweet tooth overcame my white-knuckled willpower.
I needed a cookie.
In fact there were moments when I needed a cookie more than anything else in my entire life.
That cookie represented love, power, control, and happiness.
And I know Im not alone.
IT ALL COMES DOWN TO CHEMISTRY
There were times when nothing existed in the world except me and that cookie. I had to have it.
When I start eating pasta, I cant stop. I can go through an entire box!
Every afternoon I crave a chocolate bar. I have to have it. But it doesnt really help. Forty-five minutes later Im ready for a nap.
I dont know. I cant focus. Im depressed. Im not really hungry, but I want to eat.
Ive tried everythingand I still cant lose weight.
These are all comments I have heard from my clients. Indeed, they are all comments I have said myself.
Wait a minute. Losing weight and keeping it off should not be an impossible feat. You dont have to accept your weightor that sluggish, tired, depressed feeling that frequently accompanies those extra pounds.
I knew there had to be more to my cravings than that cookie box cradleespecially when I saw my son, David, also exhibit low-blood-sugar cravings and behaviors. He was seven years old when a doctor diagnosed him as being hyperactive. He was bright, active, and articulatebut he was unable to stand still.
Dr. Feingolds theories about sugar as a cause of hyperactivity were just becoming known at the time. My interest in nutrition led me to his books. I read everything I could find. I did an enormous amount of research and observation; after all, this was my son. I watched David and noticed that the more cookies he had, the more he wanted. And the more sugar he ate, the more irritable, unfocused, and hyperactive he became. I could recognize when he had eaten sweets at a friends house. He would storm into the house, shouting and running up and down the stairs, ready for another sugar hit. He would jump in place and literally cry for a cookie. The chemical hook was definitely at work; he was a totally different boy from the calmer onecrisp, healthy apple in handwho had left a few hours earlier to play.
I wanted to help my sonand I didnt want to do it with medication. I realized that when he was not eating sweets or cookies, he was more focused and his energy level was where it should be for a healthy, active (but not hyperactive) seven-year-old. I knew there had to be a connection between the sugar he ate and the way he behaved, and I was determined to find out exactly what that connection was.
By the time I reached graduate school, I had the tools I needed to discover the answers to my questions. I knew there was a definite connection between blood-sugar levels, cravings, and behavior. It was just a matter of time until I learned what has become a missionfor David, for myself, and for everyone who thinks more about cookies than living a full, productive life.
While I was writing a masters thesis on biochemistry and science, I used my earlier training in library science to advantage, trying to find out why that cookie was so important.
I was doing my practical training at a holistic clinic while attending university; I was intrigued by the alternative medicines its health professionals used, preventative measures such as shiatsu massage, vitamins, and herbal teas that today are considered commonplace. I was open to new ideasand I was smart enough to know that the cookie monster, even for a seven-year-old, was too powerful to be the product of pure thought.
