THE FIBER-FULL DIET PLAN
Congratulations! The fact that youre reading this book means that you care deeply about your health and are taking steps to improve it. Yes, improve iteven if youve been diagnosed with type 2 diabetes or prediabetes.
Like most people, you probably werent planning a life with diabetes or prediabetes. No, you most likely had other things on your mindthings like caring for a family and home, paying the bills, volunteering in your community, coaching a youth sports team perhaps. However you fill your days, diabetes was probably not on the agenda.
In fact, odds are you were consumed with taking care of everyone and everything except yourself. That is the first thing that is going to change in your life. Caring for yourself will be the first item on your to do list from this day forward. When you are well, everything else will fall into place.
DIABETES DEFINED
If left unchecked, diabetes wreaks harm that can progress stealthily, becoming noticeable only once the damage reaches advanced stages. So if you have been newly diagnosed with diabetes, have prediabetes, or are planning and cooking meals for someone with either of these challenges, understanding the disease is critical.
Broadly defined, diabetes is a metabolic disorder that disrupts the way our bodies use the energy from food. During digestion, most of what we eat, particularly carbohydrate, is broken down into glucose, the form of sugar in the blood that provides energy. To reach all of the cells in our bodies, glucose hitches a ride in the bloodstream. But to actually get into the cells to feed them, glucose requires a hormone called insulin that is produced by the pancreas, a small gland situated just behind the stomach.
