About the Authors

Rosanne Rust, MS, RD, LDN, of Meadville, Pennsylvania, is a registered, licensed dietitian and a member of the Academy of Nutrition and Dietetics, formerly known as the American Dietetic Association. Shes a nutrition communications consultant who enjoys helping individuals and organizations develop solutions to poor eating habits based on fact, not hype. She coaches clients toward better eating and painless weight loss at www.realliving nutrition.com, an online weight-loss coaching service. Rosanne is the coauthor of Calorie Counter Journal For Dummies, Restaurant Calorie Counter For Dummies, 2nd Edition, and Glycemic Index Cookbook For Dummies, with Meri Raffetto (all published by Wiley), as well as a regular contributor for The Meadville Tribune.

Cindy Kleckner, RD, LD, of McKinney, Texas, is a registered and licensed dietitian, as well as a member of the Academy of Nutrition and Dietetics, formerly known as the American Dietetic Association. For over 30 years, shes been working in the fields of culinary nutrition, weight management, cardiovascular health, and overall wellness. She provides culinary demonstrations to individuals and groups who translate the science of nutrition into practical solutions for consumers, busy executives, and large corporations; shes known for her high-energy presentations that educate, inspire, and entertain. A true advocate that healthy cooking and taste can coexist, Cindy coauthored Whats Cooking at the Cooper Clinic (published by Its Cooking, Incorporated) and contributed to Dr. Kenneth H. Coopers Overcoming Hypertension (Bantam).

This book is dedicated to our mothers, Toni and Irene, who gave us an appreciation for the simple things in life: relationships, good food, and foods nurturing powers. Moms kitchen was always a warm place and a gathering of family and friends where we made strong connections. It was a place to have a good time, make people happy, connect to our roots, and preserve culinary traditions. Teaching us how to prepare wholesome, ethnic food was their greatest gift to us and future generations, a real language of love.
