To the Food Babe Army we say this: we understand much of this information is a direct contradiction to what you have been led to believe. This may cause feelings of anger or resentment. This is normal. Were not trying to get you to change your mind about what you consume, just trying to help you to question the information youve been presented and to understand why many people believe much of this information is wrong.
To Vani Hari: The evidence and the science is clear. If you were willing to accept your mistakes and move on, this book would not have been necessary. Our guess is youre in too deep to make those admissions now. If you choose to open up, the science community will probably welcome you. As crazy as it may seem, they are as interested in the truth as you claim to be. But some truths are harder to digest (no pun intended) and theres far less money in telling the truth.
There are invariably two sides to every story and often times the most convincing one, the one we like the sound of, is the wrong one. Even top academicsthe smartest people in the worldare prone to this, so theres no shame in suffering from this most human of failures. To err is human, but to admit youve erred takes a special type of courage.
Some of historys greatest scientists have been wrong: Albert Einstein, for example, who detested the idea of the Quantum Entanglement and Lord Kelvinmost famed for his prediction of Absolute Zeronot only got the age of Earth horribly wrong (and tried to silence those who disagreed) but famously predicted man would never achieve powered flight. And just a few years later the Wright brothers did just that.
Science can be a challenging discipline. Although we have tried to keep the text in this book as simple as possible, weve occasionally had to resort to using some big words, simply because there arent any small ones in common use. Many everyday chemicals have fancy names. Water, for instance, is the most abundant chemical (compound) on the Earth and many people are aware that its also called HO.
However, were we to invite you to drink a beaker of fresh oxidane, you may think wed gone mad. Oxidane is used to cool nuclear reactors and its found everywhere as a simple, cheap solvent. The oceans are full of it; we are full of it and life cannot exist without it. Its just a fancy name for water and its possible (if impractical) to make the stuff with no more than some hydrogen and a match!
Chemical compounds are everywhere and many of them have scary, long names which are hard to read, let alone pronounce. That last coffee you had probably had a dose of the heterocyclic aromatic organic compound and methylxanthine alkaloid 1,3,7-trimethylpurine-2,6-dionewhich is an insecticide, herbicide, and psychoactive drug. Its better known as caffeine and its harmless in the standard doses we consume in beverages such as coffee and tea.
Notice how easy it is to instill fear? Thats how charlatans work. Were going to take you on a journey to show how you might have been fooled into believing that the people you thought had your back were really only there to rifle through your wallet while you were stunned, like a deer caught in the headlights.
We dont want you to take our word for it though. This book aims to teach critical thinking, and to demonstrate how vested interests may pretend to be your friend, only because they have something to sell. Is Monsanto evil? Of course not. Its a business and businesses exist to provide products and services, while making profits for the shareholders. Every organic manufacturer, every food supplier, everyone in the food chain is in business to make money. Even Food Babe LLC is a business and Food Babe is not about to let a few facts spoil a good scare story. After all, how is she going to make a living if youre not scared into buying what she happens to be selling?
Uniquely in the West, companies and organizations have a constitutionally protected right to bend the truth under the 1st Amendement. This book attempts to get to the truth by reporting on the consensus held by the worlds experts.

If you want to horrify a new mother, show her the website that says that the cereal bits on her daughters high-chair tray are going to condemn her to a life with autism, cancer, and chronic obesity. Tell an elite triathlete that they cant trust that morsel on the end of their fork, and that published data confirm that it will destroy their performance if they elect to eat it. Teach affluent consumers that the options lining store shelves in that regular store are going to silently cause Alzheimers disease and diabetes. Do you think theyll take another bite? The fear of dietary danger is penetrating, and potently changes food choices. Al Quesadilla knows that.
