Introduction

Christmas is a time of joy and wonder, especially for children. The smell of home baked goodies fills them with excitement and wonder that we can only imagine. Christmas is that special time of year to spoil the children around you with sweets of all kinds. Cookies, cakes and homemade candies leave their mark on the hearts of children and they will forever associate the glorious aroma of cinnamon and baked goods with the joy they felt as a child.

This book contains 20 recipes that will bring back the child in you, and leave a mark on your childs heart for many years to come.

Butter Crunch Candy

Butter crunch candy is a delicious, fun to eat treat. Everyone will want your recipe, but you can keep it your little secret.

Ingredients

1 cup butter

1 cup granulated sugar

2 tbsp water

1 tbsp light corn syrup, any brand

cup chopped nuts (any kind)

2 squares unsweetened chocolate or semisweet candy-making chocolate

Directions

  1. Melt the butter over low heat in a 2 quart saucepan. Once melted, remove from heat. Add in sugar and stir with a wooden spoon until the mixture is well blended.
  1. Return the pan to the heat and stir, vigorously until it starts bubbling. Add the water and corn syrup. Mix the contents of the pan well.
  1. Use a candy making thermometer. Keep heat low and stir frequently until it reaches a brittle stage. This can take about 15 to 20 minutes. Remove from heat immediately.
  1. Sprinkle nuts across the surface and mix quickly. Pour the contents onto a lightly greased cookie sheet. Use a spatula to spread the mixture to approximately 1/4 inch thick. Cool the mixture to room temperature. As the mixture cools, loosen from the pan with a spatula 2 to 3 times while it cools.
  2. Start melting 2 squares of chocolate in a bowl over a pot of boiling water. Remove the squares before they are completely melted. Stir vigorously until melted.
  1. Spread the mixture over the crunch. Allow it to set until firm. Flip the crunch onto a sheet of waxed paper or a second cookie sheet.
  1. Spread the second side with chocolate. When the chocolate is firm, break the crunch into pieces. Store in a lightly covered container.
Christmas Chocolate Truffles

Chocolate truffles are so rich and delicious that you will want to have them all year long. Even though we have labeled them as a Christmas treat, we wont tell if you enjoy them all year long.

Ingredients

2 packages semi-sweet morsels

cup sweetened condensed milk

Pinch of salt

1 cup chopped nuts OR 1 cup chopped, candied fruit

1 tsp vanilla extract OR one tbsp Rum

Directions

  1. In a double boiler, melt chocolate over hot, but not boiling water. Stir in remaining ingredients. Pour into a 9 x 5 x 3 inch loaf pan that has been lined in parchment paper.
  1. Allow to cool for a few hours. When it is firm, cut into small squares.
  1. This recipe yields 1 - pound of truffles.
Homemade Salt Water Taffy

Saltwater taffy is an amazing treat, especially when it is made with love. You will need some candy making tools to ensure that you do not burn your taffy, but this recipe is so simple and delicious, you will be a candy making expert in no time.

Ingredients

8 cups granulated sugar

1 cup light corn syrup

1 cup water

1 tsp salt

2 tsp glycerin

1 tbsp butter

2 tsp vanilla

Directions

In a saucepan, cook all ingredients EXCEPT butter and vanilla. Stir continuously until the sugar is completely dissolved. If sugar crystals form on the side of the pan at any time during cooking, wipe them away with a wet cloth, wrapped around a fork so you dont burn yourself.

Continue cooking until the candy base the temperature reaches 260 degrees F. Remove the pot from the stove.

Once the pot has been removed from the stove, add butter to the mixture. When the butter is melted, pour the mixture into a greased pan.

When the mixture is cool enough to be handled, gather the candy into a ball and pull until it becomes firm. Add flavoring during the pulling process.

Stretch the candy out into a long rope. Cut rope into 2 inch pieces. Wrap each piece in a small piece of plastic wrap. During the pulling process, you can add color to the taffy.

Festive 5 Minute Fudge

Fudge is a great snack any time of the year. However, fudge makes a great gift for friends and loved ones that enjoy your baking skills.

This is a delicious take on fudge that only takes about 5 minutes to make, which is a welcome surprise during the fast pace of the Christmas holiday.

Ingredients

1 - 2/3 cup sugar

2 tbsp butter

tsp salt

2/3 cup evaporated milk (undiluted)

1 - 2/3 packages semisweet chocolate morsels

pound marshmallows, diced

cup chopped nuts, your choice

1 tsp vanilla extract

Directions

Grease a 9 x 8 x 2 baking pan.

Combine sugar, margarine, salt and milk in a 2 quart saucepan. Bring to a boil over medium heat. Boil for five minutes, stirring continuously.

Remove from heat; mix in chocolate, marshmallows, nuts and vanilla extract.

Beat the mixture until the marshmallows melt. Pour the mixture into the pan, sprinkle the top with nuts.

Allow to cool completely before cutting. Cut into small squares.

Makes 5 dozen 2 x 2 pieces of fudge.

Decadent Coconut Drops

Coconut drops have a luxurious flavor and an even better texture. Your family will love getting jars of this delicious candy as a holiday gift from you. Just make sure to hide the ones you make for yourself.

Ingredients

2 cups sugar

cup whole milk

1 cups shredded, sweetened coconut

tsp vanilla extract

Directions

  1. Heat sugar and milk over low heat. Stir constantly until the sugar is dissolved completely.
  1. Increase heat and cook. Make sure to stir it constantly so your candy does not burn. Cook until it reaches the soft ball stage. At this point, you should be able to drop a small drop of the candy into cold water and the candy can then be rolled into a ball.
  1. Remove the candy from the heat. Stir in coconut and vanilla extract. Using a teaspoon, drop balls of the candy onto a greased baking sheet.
  1. This recipe makes two pounds of coconut drop candy.
