DEDICATION

To Dennis, who nurtured me through this process from seed to flower with humor, intuition, and love. Youre the man.

This book is also for anyone who has died, been imprisoned, or persecuted because of a sacred plant. I wrote much of it on my laptop, sitting on a sofa that I bought on Craigslist from a mom whose son was tasered to death near his illegal cannabis growing outside of Boulder, Colorado, in 2007just as medical marijuana was blossoming into a legitimate business. Theres no justice in a town, in a world, when I can sink into that sofa and write about a planta vegetablethat cost Ryan Wilson his life.

F OREWORD

When marijuana prohibition ended, cannabis came to mainstream America. By many estimates, cannabis will be federally legal by 2020. Most American states have laws on the books or ballot initiatives in line to legalize. Weve reached a point where we can not only consider but also celebrate the merits and virtues of a plant thats been vilified and propagandized for most of our lifetimes. It will take several more decades of advocacy to end the drug war on a global scale, but were moving exponentially in that direction.

This shift in public perception and legislation has launched a cultural revolution in homes and kitchens nationwide, and this movement goes beyond normalizing cannabis use. This is about fully embracing cannabis as a sacred herb, and my friend Robyn Griggs Lawrence encapsulates it in this booka cannabis culinary journey written from the right side of history.

The world-renowned chefs featured in this cookbook are the innovators and pioneers in cannabis culinary arts, and they share with us their carefully crafted, globally inspired recipes. Robyns insider tour of these artisans kitchens provides a truly unique understanding of their nuanced, craft recipes. Steeped in the rich flavors and aromas of gourmet cannabis, these recipes are a fine taste of the future of culinary arts.

Welcome to the modern kitchenwhere the health, wellness, and psychotherapeutic benefits of one sacred plant can be harnessed with simple adherence to the wisdom of the culinary arts. With the right cannabis ingredients, culinary knowledge, and skill, any chef can also achieve the plants benefitsrelaxation for some, serious medicine for others. We are empowered to manifest wellness from our own stovetops.

Normalization is integral to ending prohibition. The Cannabis Kitchen Cookbook is leading the way. Robyn Lawrence can see into the future, to the modern kitchen, where cannabis is an herb, handled akin to rosemary or sage. This is how Americans will come to understand that cannabis in the kitchen is not a conversation about psychedelic drugs. This is a journey into the culinary arts, a whole new world of oils, butters, tinctures, infusions, simple syrups, juices, and all the endless possibilities that this plant brings to our kitchens and homes.

I grew up in a Midwestern town where the sweet stink of corn sugars being processed into syrup was a daily reminder of the industry our region was built onthe price we paid for prosperity. Today I live in Boulder, Colorado, where the tropical aroma of cannabis plants releasing volatile oilsdifficult for warehouse walls to completely containhovers over certain areas. Herbaceous and far more pleasant than my hometowns fragrance, this new smell is also a by-product of prosperity.

Boulder is one of a handful of places in the world where cannabis can be legally produced, sold, and consumed, and the industry is booming as people discover the plants culinary and medicinal value. Cannabis is part of many Coloradoans fanatically healthy lifestyles, a source of inspiration and pleasure for a diverse group of professionals, carpenters, outdoor enthusiasts, yogis, and soccer moms. It has brought tax and tourism dollars, worldwide attention, and a deep responsibility.
