P ARIS HAS CHANGED A LOT DURING THE SIX YEARS SINCE I wrote the first edition of Hungry for Paris, and mostly in ways that are for the good. To be sure, the sort of traditional bistros I remain besotted withcozy places that serve long-simmered dishes like boeuf bourguignon and cassouletcontinue to become rarer as their owners retire and a new generation of bistro chefs mostly prefer dishes of their own invention to this classic repertoire, but many of these new places are superb.

Whats also changed is how the men and women in the kitchens of the new modern bistros of Paris perceive their work. They see themselves as chefs rather than as cooks, with the imperative of expressing themselves creatively through their cooking. If this has made it harder to find a good coq au vin, its also led to a delicious renewal of the citys culinary landscape and gastronomic preeminence.

People often ask me if the French capital still deserves its vaunted epicurean reputation, and I instantly tell them it does. The rigor of a French gastronomic education is second to noneall you have to do is spend as much time in Paris kitchens as I have to see this truth in action. And then theres the culinary exigence of the Parisian public, something thats informed by Frances long and glorious love affair with great food. Finally, the variety and quality of the ingredients available to Parisian chefs remain unequaled almost anywhere in the world, not just in regard to the countrys dozens of cheeses or magnificent poultry, but also considering the stunningly good foods made by French bakers, charcutiers, and others, along with the glorious bounty of its farms, pastures, and waters.

A growing interest in locavore dining, or food thats both seasonal and locally grown, as well as in eating more healthfully, has encouraged the birth of a new generation of remarkable food suppliers such as Terroirs dAvenir, a small company that stocks the larders of many of the citys most talented young chefs. Paris may lack the abundant ethnic options of cities such as New York, London, or Los Angeles, but in terms of offering spectacular food for midrange prices, it still bests all comers in the Western world.
