Banana Nut Oatmeal
To kick things off, we have a delicious and easy oatmeal recipe you can make to kick start your morning. Take it with you as you head out to work in the morning.
Makes: 1 serving
Total Prep Time: 10 minutes
Ingredients:
- cup of rolled oats
- 1 cup of water
- 1 banana, thinly sliced
- 1 Tbsp. of walnuts, chopped
- 1 tsp. of powdered cinnamon
Directions:
- In a bowl, add the rolled oats and 1 cup of water. Stir well to mix.
- Place into the microwave and cook for 3 minutes on the highest setting.
- Top off with the sliced bananas, chopped walnuts and powdered cinnamon.
- Serve immediately.
Lime Glazed Pork Chops
This is a delicious and filling pork chop dish you can make any night of the week. It is low in sodium, so you dont have to worry about stuffing yourself with excess sodium in the process.
Makes: 4 servings
Total Prep Time: 25 minutes
Ingredients:
- 1/3 cup of orange marmalade
- 1 jalapeno pepper, seeds removed and chopped
- 2 Tbsp. of lime juice
- 1 tsp. of grated gingerroot
- 4 pork chops, bone-in
- 4 tsp. of cilantro, minced
- Lime wedges, for serving
Directions:
- Prepare the glaze. In a saucepan set over medium to high heat, add the orange marmalade, chopped jalapeno pepper, fresh lime juice and grated gingerroot. Stir well to mix. Cook for 4 to 6 minutes or until melted.
- Grease the grates of the grill with cooking spray.
- Place the pork chops onto the grill. Grill for 8 to 10 minutes or until cooked through.
- During the last 5 minutes or grilling, brush with the glaze.
- Remove and set aside to rest for 5 minutes.
- Serve with a topping of the cilantro and lime wedges.
Turkey Smothered in a Mushroom Sauce
This is a delicious and filling dish you can make whenever you want to surprise your significant other with some healthy.
Makes: 8 servings
Total Prep Time: 4 hours and 15 minutes
Ingredients:
- 1 chicken breast, boneless and skinless
- 2 Tbsp. of butter, melted
- 2 Tbsp. of parsley, dried
- tsp. of salt
- tsp. of tarragon, dried
- 1/8 tsp. of black pepper
- 1, 4 ounce jar of mushrooms, thinly sliced
- cup of dried white wine
- 2 Tbsp. of cornstarch
- cup of cold water
Directions:
- Place the turkey into a large slow cooker.
- Brush the top of the turkey with the melted butter. Season with the dried parsley, salt, black pepper and dried tarragon.
- Pour the jar of mushrooms and dried white wine over the top of the turkey.
- Cover and cook on the lowest setting for 3 to 4 hours.
- Remove the turkey and set onto a plate. Cover with a sheet of aluminum foil. Set aside to rest for 10 minutes.
- Transfer the juices from the slow cooker into a saucepan set over medium to high heat. Allow to come to a boil.
- In a bowl, add the cornstarch and water. Whisk until smooth in consistency. Pour into the saucepan. Allow to come to a boil. Cook for 2 minutes or until thick in consistency.
- Serve the turkey with the sauce poured over the top.
Potato Hash Browns
Make these delicious guilt free breakfast treats whenever you need to give your body some fuel to get going in the morning.
Makes: 4 servings
Total Prep Time: 40 minutes
Ingredients:
- 4 cups of russet potatoes, peeled and shredded
- cup of green onions, thinly sliced
- cup of green bell pepper, chopped
- 2 Tbsp. of cornstarch
- tsp. of salt
- tsp. of black pepper
- tsp. of powdered onion
Directions:
- Preheat the oven to 475 degrees.
- In a bowl, add the shredded russet potatoes. Cover with water and set aside to soak for 5 minutes. Drain and pat dry with a few paper towels. Transfer into a bowl.
- In the bowl, add the sliced onions and chopped green bell pepper. Stir well to mix.
- Add the cornstarch and powdered onion. Season with a dash of salt and black pepper. Toss well to mix.
- Place a sheet of aluminum foil onto a baking sheet. Grease with cooking spray.
