- In a bowl, mix the egg yolks with the sugar and whisk well.
- Add 1 cup of half-and-half mix and whisk well.
- Add this over the remaining half and half mix, return the pot to medium heat and cook for 3-4 minutes.
- Strain this into a bowl, add the oil and the lemon zest, whisk, cool down and keep in the freezer for 2 hours.
- Transfer to your ice cream machine and process according to the instructions before serving.
