Key Lime Ice Cream Cake
Ice-creamsmake the summer time really fun and exciting. What is more exciting is anice-cream cake to satisfy your sweet tooth.
Ingredients:
A16 oz pack of white cake mix
1cup of castor sugar
1cup of graham crackers, coarsely crumbled
5tablespoons of key lime juice
1teaspoon of lime zest, grated
2liters of vanilla ice-cream
A16 oz bottle of frozen whipped cream, thawed at room temperature
Instructions:
Preheatyour oven to 325 degrees.
Preparethe white cake mix according to the instructions on the package. Line two15x10 jelly-roll pans with wax paper. Pour the mixture into the pans and bakethem according to the instructions on the package.
Cut2 pieces of aluminum foil equally into 24x18. Sift 1/3 of the castor sugarequally on both the foils.
Whenthe cakes are done, invert each of them onto the individual foils, discardingthe wax papers.
Placea cloth towel on both the cakes and roll them together. Put the rolled cakesinto the refrigerator for 30 minutes or until they are completely cooled.
Whenthe cakes are chilled enough, take them out of the refrigerator and unrollthem. Remove the towel. Make sure that the cakes are on the aluminum foil.
Takeout the vanilla ice-cream and soften it at room temperature. Add in thecrumbled crackers, lime zest and the key lime juice into the ice-cream and mixwell. Spread the ice-cream mixture evenly on both the cakes. Make sure to leavea border of 1 on both sides of the cake. Roll the cakes up, put them intoindividual foils and seal the ends properly.
Putthe cakes into the freezer for at least 8 hours or overnight. When it is timeto serve them, remove them from the foils and top with whipped cream.
Servewith any fruits of your choice or as it is.
Strawberry Cheesecake Ice Cream Cake
Tobeat the heat this summer, try out this amazing strawberry cheesecake icecreamcake.
Ingredients:
Apack of shortbread cookies
A14.5 oz can of condensed milk
8oz of cream cheese, softened
8oz of Cool Whip
+ cup of butter, softened at roomtemperature
1teaspoon of vanilla extract
1tablespoon of lemon juice
Acan of Strawberry pie filling
Instructions:
Usingan electric beater, mix the condensed milk, cream cheese, cool whip, butter,lemon juice and vanilla extract together. Mix until a smooth mixture is formed.Your ice-cream batter is prepared.
Crushthe biscuits with the butter using a food processor. Simply throw in the crumbsinto the ic-cream batter and do not stir.
Simplypour the pie filling into the batter and fold it in with the help of a spatula.Make sure not to overmix.
Pourthe mixture into a loaf pan and refrigerate it for 8 to 10 hours or preferablyovernight.
Servewith fresh strawberries and strawberry sauce.
Banana Walnut Ice Cream Cake
Weall love that crunch of walnut in a banana cake. Try this banana walnuticecream cake and delight your guests.
Ingredients:
Yolksof 2 eggs
1cup of castor sugar
2large and ripe bananas, mashed
2 cups of dairy whipping cream
2 cups of evaporated milk
1cup of walnuts, toasted and crushed
2sponge cakes
Instructions:
Takean electric beater and beat together the egg yolks, castor sugar and the mashedbananas until the sugar is dissolved and the mixture becomes pale and creamy.
Ina saucepan, bring the whipping cream to a boil. Add in the banana mixture andgive the mixture a stir. Remove the saucepan from heat and let the mixture coolto room temperature.
Addin the evaporated milk to the cream and banana mixture and mix well with thehelp of a spatula.
Pourthe mixture into an air tight container and put it into a freezer.
Nextmorning, take out the mixture from the freezer and whisk it until it becomesmore creamy.
Addin the chopped walnuts and freeze the mixture again until it becomes reallyfirm.
Whenit is time to serve the ice cream cake, take a spring mold and put one spongecake in it. Top the cake with ice cream and place the other sponge cake on thetop. Serve with more chopped walnuts and diced banana on top.
Mint Chocolate Chip Ice Cream Cake

Ingredients:
2 cups of all-purpose flour
1 cup of brewed hot coffee
1cup of unsweetened cocoa powder
1 teaspoon of salt
2+ 3 cups of sugar
2 teaspoons of baking soda
3large eggs, whole
1 cups of sour cream
1cup of 2 tablespoons of canola oil
1cup of whole milk
2cups of heavy cream
Apinch of salt
Abunch of fresh mint
1cup of chocolate chips
Instructions:
Forpreparing the ice-cream, take a heavy bottom saucepan and heat the heavy cream,3 cups of sugar, milk and a pinch of salt in it. Make sure that the heat ison medium low.
