INTRODUCTION
Traditions are invisible chords that connect us to our roots and often make up a huge part of the answer to a question we ask ourselves, Where do I come from? A great part of our traditions are about what we eat. Whatever weve grown up eating or seen being made at home, that holds a certain sense of purpose and placement is a caressing gentle parental hand that touches us, defeating time, across generations.
I am happy to present my mother Mrs. Bhavani Ganesans OPOS cookbook which is a chest full of treasures she collected meticulously from the elders of our home. These recipes are either long forgotten or are regional variations of popular versions. The main reason why these dishes havent been popular these days has to do with the complexity, long cooking times and multiple steps/preps involved in the recipes. These problems are defeated with OPOS where the user only needs to follow ultra-short, few line recipes, with cooking times that are less than 10 mins.
Mrs. Bhavani, like every mother, had always cooked for me and hence always had busy and early mornings. Her schedules revolved around my schedules. But when I moved away for higher studies, I was worried how she would occupy herself and that she might feel the vacuum of my absence. Thats when I added her to United by Food. Thereafter, our conversations were full of OPOS attempts and appreciation of recipes and techniques. Her OPOS journey has not only transformed her as a person but has also transformed our relationship.
I hope that this cookbook will help everyone to cook free and also receive a piece of gastronomic tradition that has been a part of several Tamil Brahmin households across generations.

BT | Bottled tadka (Premade tadka). A tadka is a mixture of spices fried in oil/ghee. Its a staple used in OPOS cooking. Usually tadka is made by heating oil in a pan and frying spices, mustard and/or lentils, curry leaves and red chillies. This is stored in airtight containers and used in dishes as required. |

Every single OPOS recipe is debated, tested, fine-tuned and validated hundreds of times by members of United By Food and OPOS School Facebook groups. The work of this passionate group of doctors, nutritionists, dietitians, bloggers, authors, chefs, food stylists, artists, homemakers, actors, scientists, caterers and many others continues to shape OPOS.
6. I was always OPOSing!
OPOS is not a fancy word for pressure cooking. Very few OPOS recipes follow the "Dump all into a cooker" technique. Most OPOS recipes are built on pressure baking, a brand new cooking technique. Pressure baking, in addition to the techniques listed below is responsible for the intense taste, textures, colours and flavours of OPOSed dishes.

9. Equipment needed:
OPOS works best with the OPOS kit available at www.oposkit.com. The pressure baker has been specially designed for OPOS. It is built to cook without water and over high heat. It comes with a silicone gasket to withstand dry heating, a lead free safety valve and precisely calibrated weight set to ensure healthy whistles. It has a set of stainless steel measuring cups, inner vessel with lid, flash separators and flash cards with step by step lessons. Normal pressure cookers are not designed to cook without water or over high heat. The safety valves blow, gasket melts and food burns. The manufacturers insist you never cook without water and never to cook over high heat. However you can use 2L normal Indian whistling pressure cookers, if you are very careful and know what you are doing.
