Introduction
Millets are lesser known grains, often classified as poor man's grain. The world has started realising the health benefits recently. They are going to be the future of the world as they require less water, care and can also be grown in dry places. Millets are highly nutritious and their low GI makes them diabetic friendly. With OPOS techniques in hand, I have tried to cover dishes from starters to main course, snacks and desserts. All the recipes are tried, tested and validated across all age groups.

Foreword
When I had to change my diet on health grounds, I was crestfallen ... thought I would have to live on bland tasteless foods. However, my spouse Vijaya, after an extensive research, experimentation (ofcourse I was the lucky guinea pig!) and unrelenting perseverance, has come up with healthy tasty recipes. She has the uncanny ability to think out of the box and come up with unimaginable combinations( after all recipes are combinations of proportions, timings and techniques). She hit a fantastic combination of Millets and OPOS, resulting in easier cooking methods and tasty healthy dishes on an everyday basis.

Spice Mix:
Dry roast 1/2C grated coconut, 1tsp methi seeds and 1 tsp white sesame seeds. Fry 4tsp Chana dal, 5tsp Coriander seeds, 1/2tsp cumin seeds, 4 byadagi red chillies and 5 normal red chillies in a tbsp oil. Grind everything to powder.

6. I was always OPOSing!
OPOS is not a fancy word for pressure cooking. Very few OPOS recipes follow the "Dump all into a cooker" technique. Most OPOS recipes are built on pressure baking, a brand new cooking technique. Pressure baking, in addition to the techniques listed below is responsible for the intense taste, textures, colours and flavours of OPOSed dishes.

9. Equipment needed:
OPOS works best with the OPOS kit available at www.oposkit.com . The pressure baker has been specially designed for OPOS. It is built to cook without water and over high heat. It comes with a silicone gasket to withstand dry heating, a lead free safety valve and precisely calibrated weight set to ensure healthy whistles. It has a set of stainless steel measuring cups, inner vessel with lid, flash separators and flash cards with step by step lessons. Normal pressure cookers are not designed to cook without water or over high heat. The safety valves blow, gasket melts and food burns. The manufacturers insist you never cook without water and never to cook over high heat. However, you can use 2L normal Indian whistling pressure cookers, if you are very careful and know what you are doing.
