Dear SCD Bakers,
Thank you for joining me on this grand journey to better health. At times, it seems like an uphill trek with many obstacles, but it is worthwhile. I strongly believe that our health and happiness is directly linked to our choices about what we put into our bodies every day.
My goal with this book is to give you recipes to enjoy on every occasionbirthdays, holidays, or just brunch with friendsthe same way that everybody else does. I want to change the implication that a diet is negatively restrictive. Guess what? You can be healthy and still eat cake, although I do recommend moderation.
As a private chef, I have spent years working with clients on their special diets, cooking meals (and occasionally desserts) that fit their specific needs. I have worked with many different types of diets, including gluten-free, vegan, soy-free, and even weight-gain diets. It gives me great pleasure to help relieve some of the pressure and struggle that can come with meal planning when you are on a diet.
My own family and several friends work at being gluten-free for various health reasons. Even while developing this book, I was able to help my mother, who had developed inflammation in her digestive tract, with her diet and in healing her gut.
Creating the recipes for this book was a challenge that I was happy to accept. At times, it seemed overwhelming, but Im sure we have all felt stressed at some point when preparing food on SCD. Some recipes just didnt work and others had to be tested several times to make sure they were just right. I had baked goods everywhere in my house. I know, sounds tough, right? After months of baking, and giving my oven and mixer a good workout, I present these recipes to you. Ill admit, I have my favorites, such as (page 18). As you flip through the book and try some of the recipes, I hope that you find your own favorites that you can indulge in and that they help you heal.

About the Specific Carbohydrate Diet
The Specific Carbohydrate Diet, or SCD, is a precise diet designed to help heal the digestive system. It is essential for those suffering from what can be debilitating disorders such as Crohns disease, ulcerative colitis, irritable bowel syndrome, celiac disease, and other gastrointestinal ailments.
While this diet has helped many suffering from digestive disorders and other ailments, each individual is different and this diet might not be as effective for you as it is for some others. I recommend that you read Breaking the Vicious Cycle to get all of the information about SCD in your journey to better health and happiness and to consult with your doctor before beginning this diet.
The Specific Carbohydrate Diet was created by Drs. Sidney V. and Merrill P. Haas in 1951. It was designed to be a normal and nutritious diet, with a limit to the types of sugars and starches allowed. On the diet, only monosaccharides, the simplest form of carbohydrate, are allowed. If followed for a minimum of 1 year, the diet would allow some people to heal and then return to a normal way of eating without any digestive distress.
The SCD that is used today follows the writing of Elaine Gottschall in her book Breaking the Vicious Cycle. Her own daughter was diagnosed with ulcerative colitis at a young age and although they had tried many different medications and various treatments, nothing helped. In 1958, Dr. Sidney Haas prescribed this specific diet and within a short period Gottschalls daughter was able to stop taking medication and, remarkably, became free of all symptoms within 2 years. Elaine Gottschall wanted to learn more about the diet that cured her daughter and to share it with anyone whom it might help. She went on to study biology, cellular biology, and nutritional biochemistry, focusing her studies on the effects of sugar on the digestive system and the effects of inflammatory bowel disease on the intestinal walls.

While the Specific Carbohydrate Diet is strict, it is also very nutritious and balancedyet can still be fun and full of sweet treats just like the goodies you already know and love. Baking seems like a challenge at first, as all-purpose flour, baking powder (as it has anti-caking agents), sugar, and yeast (because it promotes bacterial growth in the gut) are not allowed. But dont be discouraged. Instead, you can use nut and coconut flours, with eggs and baking soda as leaveners, and honey and dates as sweeteners.
A note about baking with SCD ingredients: Many of the ingredients are considered very advanced. Try each new ingredient slowly and see how you react. If you are baking for someone following SCD, make sure that person is able to tolerate each of the ingredients listed in the recipe, namely honey, nuts, eggs, and dates.
