Acknowledgments
It takes many hands to complete a work It is almost impossible to explain how many people it took to put this book together. I also dont know how to thank them all, but I will try. To my husband, Chris, thank you for believing in me and my abilities. To our teens, Joe and Lisa, you have tasted and tested more food than you would ever have wished to taste and test. From now on I will try very hard not to say, Oh, a little of this and a little of that in response to your question, Mom, whats for dinner? To Jane and Tim, who helped me to stabilize my thought processes I will be forever indebted to both of you. Thanks to Mom and Dad Cannata for supporting me in so many ways and teaching me how to be independent and confident.

I have passed these skills along to our children I love you. And Mom, thanks for being such an outstanding cook and teaching me more in the kitchen than I can ever list. I am very lucky to have worked beside you all those years in your Italian kitchen. And yes, Mom, you will come to New York City with me! To Mom and Dad Hanna your patience, support, prayer, and unconditional love through the years have been more than anyone could ask I love you. To my sisters, Cindy and Gina, thank you for loving me just the way I am! To my lawyer friends Tom Hall and Pat Corbett, thank you for working through the contracts with me. To Bill and Nancy, you are comfort to my soul.

To John, Lauren, Patti, and Judy, thank you for being there when I needed you most. To Earl you probably didnt think that I would mention you but your gentle nudging, genuine concern, and confidence in my ideas and my abilities have helped more than you know. I would like to thank all of my friends, neighbors, and family from the bottom of my heart; you were essential in testing recipes and giving hints, comments, directions, corrections, options, opinions, and observations. Linda and Tom, Shawn and Gretchen no one in the world could ask for better neighbors than you. Thank you for the long driveway talks and the endless hours of food testing. Barb and Tim Mansfield and Chris Coady all three of you have outstanding knowledge of food; your honest, sophisticated, helpful, and tender suggestions helped to make this book taste great.

Thanks for being my friends. I have traveled far to find friends as genuine as Hott Rhonda and Kathleen. I love you both and thank you for all your laughter, tears, support, and knowledge, and for the crash course in editor language. Sam, cheap coffee is not the same without you you are the guardian angel given to me by God. Thank you to Sam Speigel of Partners and Rhoda at Schuler books; you always had the time to help answer questions and guide me through the book-selling process. Thanks to Dr.

Monish Jain for your knowledge and wisdom when discussing the eating habits and styles of adolescents and teens. Richard Baldwin, you have been a wealth of knowledge and inspiration, and an unending source of information. Without you and your class, I know I would not have written this book. Thank you! And Storey Publishing wow, you guys are great. Thanks for believing in me and having the vision for this book. Pam Art, Dan Reynolds, Jessica Richard, Stephanie DiSantis, Maribeth Casey, Maryellen Mahoney, Deborah Balmuth, Margaret Lennon, Kim Corey, Wes Seeley, Alethea Morrison, and everyone else who has made me feel so at home at Storey thank you.

In particular, thanks to my editor, Margaret Sutherland, for her patience and calming nature. And most of all, thanks to God without your help, guidance, and eternal love and forgiveness I would not be here!

Creating a Healthy Relationship with Food
Come on, we gotta GO!!! Sound familiar? Every day, millions of parents yell these words to their kids while running out the door armed with baseball bats, shin guards, book bags, trumpet cases, and water bottles. Juggling careers and family activities has become a way of life for many of us and, unfortunately, nutrition often falls by the wayside. Eating out is okay once in a while or when youre in a pinch, but nutritionally speaking, its lousy not to mention how fast it can blow a familys budget or waistlines! An important step toward keeping your family healthy and fit is to think about how to have good, fun, nutritious, economical, home-prepared food replace fast food and concession-stand snacks. I decided to write The Good-to-Go Cookbook after my children started school and I helped to serve lunch in the school cafeteria. At the time, I could not believe what I was seeing in childrens lunch boxes.

The school lunch program was no better, and teachers were using candy in the classroom as a way to motivate students. Wake up and smell the dental bills! This book is filled with delicious, healthy, easy-to-follow recipes for busy families. The recipes are for kids of all ages, but theyre especially geared toward teenagers. There are so many books out there on feeding children, but far fewer seem to address the older kids in the house. We must be as passionate about the food we prepare and serve to our families as we are about our jobs, hobbies, fitness regimens, or sports teams. To say I cant cook is no excuse.

You dont have to be Martha Stewart to prepare healthy meals at home. All it takes are some good recipes and a new attitude. Where to start? Right at your local grocery store. As you walk through the aisles, be more aware of the choices you make. Dont favor quick and fast over nutrition. How healthy can a food item be when the ingredients listed include salt, corn syrup, or a multitude of things you cant pronounce? Eating well doesnt have to be hard, and its the best thing that you can do for your family.
