Introduction
Pimento cheese is probably the most famous sandwich spread in the south.
There is a reason it is one of the most loved sandwich spreads. The tangy creamy texture is perfect for spreading. We also love ham, tuna and bean spreads. Of course with a great sandwich, you need a delicious dip to go with the chips. We grow our own vegetables and you always need a delicious dip or spread for fresh veggies. Included are 200 family favorite sandwich spreads and dips.
Tailgating is huge in the south. Everyone has a favorite team and we always compete for the best recipes. While the grill is cooking your favorite meat, you need snacks and appetizers for the game. The wide variety of spreads and dips will meet any game day taste.
Sandwich & Snack Spreads
I love a snack of crackers and a creamy spread. I always keep snack spreads in the refrigerator for a quick snack.
They are quick to make and I usually have the ingredients on hand.
Pecan Pimento Cheese
Toasted pecans are a must for this recipe. Makes 2 1/2 cups
Ingredients 1 1/4 cups mayonnaise 4 oz. jar diced red pimento, drained 1 tsp. Worcestershire sauce 1 tsp. cayenne pepper 1 cup chopped pecans, toasted 8 oz. sharp cheddar cheese

Shredding your own cheese makes a huge difference in the texture and taste of homemade pimento cheese. Add the mayonnaise, red pimento, Worcestershire sauce, onion, cayenne pepper, pecans and grated cheddar cheese to a mixing bowl. Stir until blended and combined. Cover the bowl and refrigerate the pimento cheese for 1 hour before serving.
Baked Pimento Cheese
Makes 4 cups
Ingredients 1 1/2 cups mayonnaise 4 oz. grated onion 1/4 tsp. cayenne pepper 1 tsp. cayenne pepper 1 tsp.
Worcestershire sauce 8 oz. sharp cheddar cheese, shredded 8 oz. mild cheddar cheese, shredded 1/4 cup chopped fresh parsley Directions Preheat the oven to 350. Spray a 11 x 7 baking dish with non stick cooking spray. In a mixing bowl, add the mayonnaise, red pimentos, onion, cayenne pepper and Worcestershire sauce. Stir until combined and add the sharp cheddar cheese and mild cheddar cheese.
Stir until combined. Spoon the pimento cheese into the baking dish. Bake for 20 minutes. The cheeses should be melted, golden brown and bubbly. Remove the dish from the oven and sprinkle the parsley over the top.
Chili Pimento Cheese
Makes 4 1/2 cups
Ingredients 8 oz. cream cheese, softened 1/2 cup mayonnaise 2 garlic cloves, minced 2 tsp. sweet pickle relish, drained 4 cups shredded sharp cheddar cheese 8 oz. jar diced red pimentos, drained 4 oz. can chopped green chiles, drained 1/2 cup chopped pecans, toasted

Using a mixer on medium speed, beat until smooth and combined. Turn the mixer off and stir in the red pimentos, green chiles and pecans. Cover the bowl and chill for 4 hours before serving. Spread on bread for sandwiches or use as an appetizer or snack. Poblano Green Chile Pimento Cheese
Makes 6 cups
Ingredients 4 cups shredded sharp cheddar cheese 2 cups shredded Pepper Jack cheese 1 cup mayonnaise 4 oz. can diced green chiles, drained 4 oz. jar diced red pimentos, drained 1 poblano chile pepper, seeded and minced 1/4 cup onion, minced 2 tsp. jar diced red pimentos, drained 1 poblano chile pepper, seeded and minced 1/4 cup onion, minced 2 tsp.
Worcestershire sauce Directions Add all the ingredients to a mixing bowl. Stir until well combined. Cover the bowl and chill for 2 hours before serving. Spread on bread, crackers or tortillas.
Cream Cheese & Olive Pimento Cheese
Makes 4 cups
Ingredients 1/4 cup mayonnaise 4 oz. grated onion 8 oz. cream cheese, softened 1/4 tsp. cayenne pepper 1 tsp. cayenne pepper 1 tsp.
Worcestershire sauce 3/4 cup pimento stuffed green olives, chopped 8 oz. sharp cheddar cheese, shredded 8 oz. mild cheddar cheese, shredded Directions In a mixing bowl, add the mayonnaise, red pimentos, onion, cream cheese, cayenne pepper and Worcestershire sauce. Stir until combined and add the olives, sharp cheddar cheese and mild cheddar cheese. Stir until combined.
Southern Pimento Cheese
Makes 4 cups

White Cheddar Pimento Cheese
Makes 1 1/2 cups
Ingredients 8 oz. block sharp white cheddar cheese, softened 4 oz. jar minced red pimentos, drained 1 jalapeno pepper, seeded and minced 1/4 cup mayonnaise
