  • 1 tbsp. taco seasoning or to taste
  • 1 diced and seeded green chili optional heat
  • 2 cups prepared chili homemade preferred
Directions:
Place the ingredients except the chili in a slow cooker.
Cook on high for 2 hours.
Stir in the chili and cook another 10 minutes.

  • 3 tbsp. chopped scallions
  • 1 tbsp. taco seasoning optional added heat
Directions:
Combine all ingredients and refrigerate.

  • 1 lb. refried beans
  • 2 cups enchilada sauce
  • 2 cups sour cream
  • 8 oz. whipped cream cheese
  • 2 tsp. fajita seasoning
  • cup chopped green chilis
  • 2 cups shredded Cheddar cheese
  • 1 diced tomato
  • 3 chopped scallions
  • cup chopped black olives
Directions:
Brown the ground beef in a skillet for 5 minutes.
Combine the ground beef, refried beans and enchilada sauce in a bowl.
Place the mixture in the bottom of a 9 x 13 dish.
Combine the sour cream, whipped cream cheese, and fajita seasoning.
Top the beef/refried beans mixture with the sour cream.
Top with green chilis, cheddar cheese, diced tomato, scallions, and black olives.

  • 2 tbsp. bacon grease (save some when you prepare bacon it makes a difference in the taste)
  • 2 tbsp. chopped onion
  • 2 minced garlic cloves
  • 2 (15 oz.) canned pinto beans with liquid reserved
  • 1 tsp. chili powder
  • tsp. cumin
  • 1 tbsp. taco sauce
  • 1 tbsp. ranch dressing seasoning mix
  • 1 tbsp. lime juice
  • Salt to taste
Directions:
Heat the bacon fat in a skillet.
Saut the onion and garlic for 5 minutes.
Stir in the remaining ingredients, along with cup of the bean liquid (or as needed), and simmer for 10 minutes.
Use a potato masher to mash the mixture.
