Start by preheating the oven to 375 degrees F, and then coat a loaf pan with cooking spray.

Then add the oil, sugar, eggs and vanilla to a different bowl and whisk them together, then stir in the zucchini.

- Unsalted Hulled pumpkin seeds cup
- Flaxseeds 3 tbsp.

- Salt tsp.
- Large eggs 3
- Buttermilk 1 cup
- Avocado oil cup
- Chia seeds 1 tbsp.

Instructions:
Start with preheating the oven to 350 degrees F and then coating a loaf pan with cooking spray. Also, line the bottom of the pan with parchment paper.
Then, combine the seeds pumpkin seeds, sunflower seeds, sesame seeds and flaxseeds in a skillet and then toast them on medium heat while stirring until they turn light brown and start to pop in about 7 minutes.
Set aside around 2 tbsp. of the seed mix in a bowl and then transfer the rest of the seeds onto a larger bowl.

Then in another medium bowl, whisk the oil, buttermilk, maple syrup and chia seeds.
Next, combine the dry and wet ingredients together, and scape the batter into the prepared pan.
