Sour Cream Banana Bread

Ingredients
1/2 cup margarine or 1/2 cup butter1 cup sugar2 eggs1 teaspoon vanilla1 1/2 cups flour1 teaspoon baking soda1/2 teaspoon salt1 cup mashed banana1/2 cup chopped nuts ( omit if you don't like nuts)1/2 cup sour cream
Directions
Preheat oven at 350 o F temperature. Use non-stick spray to grease a large loaf pan. Combine the eggs, sugar, margarine and vanilla. Put in the dry ingredients and then add the sour cream, nuts and bananas. Mix well then bake in the preheated oven for an hour.
Bacon-Wrapped Jalapeno Poppers

Ingredients
25 fresh jalapeno peppers14 -16 ounces cream cheese2 cups shredded cheddar cheese2 (16 ounce) packages bacon
Directions
Preheat the oven with 450 o F temperature. Remove the stems of the jalapeno peppers then slice in half lengthwise. Make sure to remove the seeds from the jalapeno peppers. On each pepper, fill with cream cheese. Top with shredded cheddar cheese. Wrap each pepper half with 1/2 slice of bacon. Place the pepper halves in the baking sheet. Bake until the bacon is cooked for around 10-15 minutes. Remove the baking sheet from the oven. Serve when ready.
Sausage Balls

Ingredients
1 lb bulk sausage1 (10 ounce) packages sharp cheddar cheese ( grated)2 cups Bisquick baking mix
Directions
Preheat the oven with 400 o F temperature. Let the sausage and cheese cool down to room temperature. In a mixing bowl, put in the Bisquick, sausage and cheese. Combine and blend until smooth enough. Quick tip: For great results, use a hand-held mixer to smooth the ingredients. Note: Mixture might be a little dry. Place an aluminum foil in to cookie sheet. Spray with non-stick oil spray. Use your hands to form or roll the mixture into 1 inch sausage balls. Arrange in the cookie sheet for at least an inch apart. Place in the oven and bake until golden brown, for around 10-12 minutes. Use paper towels to drain excess oil. Serve with your favorite dip.
Stuffed Mushrooms With Cream Cheese & Sausage

Ingredients
2 (12 ounce) packages white button mushrooms, cap size doesn't really matter1 (8 ounce) packages cream cheese1 (8 ounce) packages sausage1/4 cup butter ( melted, quite optional!)
Directions
Preheat the oven with 350 o F temperature. Clean the mushrooms then separate the stems and caps. Drain the excess water. Use a frying pan to cook the sausage over medium up to medium-high heat. In a mixing bowl, put in the cream cheese to soften. Mince the stem pieces. Season the sausage to taste.Quick tip: Add garlic if desired. Put in the minced stem pieces into the cooking sausage. Remove from heat then drain the excess oil. Put in the sausage mixture into the bowl of cream cheese. Use a wooden spoon to mix the ingredients well. Arrange the caps in the 13x9 pan with sides.Quick tip: Melt a small amount of butter then brush at the bottom of the caps. Reserve some melted butter for the top of the caps once they are filled. Then spread the excess butter at the bottom of the pan. Pour the sausage mixture into each cap. Pour a little water to cover the bottom of the pan. Bake until the tops look a little crusty, when the mushrooms look darker, for around 30-45 minutes. Use a slotted spoon to scoop the caps from the pan. Carefully place on a plate then serve while warm.Note: Reheat if preferred to serve at a later time.
Spicy Baked Sweet Potato Fries

Ingredients
2 medium sweet potatoes, washed and cut lengthwise into strips 1/3 inch on each side1 1/2 tablespoons olive oil1 teaspoon ground cumin1/2 teaspoon chili powder1/4 teaspoon salt1/2 teaspoon onion powder
Directions
Preheat the oven with 450F temperature. Prepare the cookie sheet with parchment paper or aluminum foil. Use a medium bowl to mix the sweet potatoes, seasonings and olive oil. Make sure the potatoes are evenly coated. Arrange the potato strips on the cookie sheet for at least an inch apart. Place in the preheated oven then bake until the potatoes or crispy for about 15 minutes. Turn the potato strips every 5-7 minutes, or as needed. Serve warm.
Bacon Rollups
Prep Time: 15 mins
Total Time: 45 mins
Yield: 48 rollups
Ingredients
2 (3 ounce) packages cream cheese with chives ( softened)1 tablespoon milk or 1 tablespoon mayonnaise25 slices mixed grain bread ( crusts removed & cut in half)25 slices bacon ( cut in half)parsley sprig (optional)
Directions
Preheat the oven with 350 o F temperature. Use a bowl to combine the milk or mayonnaise and cream cheese. Stir until smooth. On each half of the bread, spread a teaspoon of the cheese mixture. Tightly roll the bread to the tip. Wrap the rolled bread with bacon. Use a toothpick to secure lock. Arrange the rolls on a broiler pan. Place the pan in the preheated oven then bake for about 30 minutes. Turn the rolls if necessary. Sprinkle parsley sprig if preferred.Note: To bake at a later time, keep the rolls frozen. Remove the frozen rolls from the freezer then thaw or defrost in the refrigerator overnight. Bake for 30-40 minutes at 350 o F.
