The Complete Book of Raw Food, Volume 2 is dedicated to the memory of Linda Merrylees, who passed away in April 2013. Linda, the Operations Manager at Lionville Natural Pharmacy, used to work at Kimberton Whole Foods. Years ago, when I found out that I had food allergies and candida and initially didnt know what to do, Linda was the person who took me around the store and showed me what I could and couldnt eat. I am, and will always be, eternally grateful to Linda.

A very special thanks to Donna Batman (who was the visiting nurse to both my mom and my dad) for lending me her son, Josh Batman, who I like to call my rent-a-son. Josh came to my rescue when I broke my leg two years ago and couldnt drive, but still needed to attend physical therapy. He needed a summer job, and I needed a lift. Then, while I was on crutches from the spring through to the fall and needed extra help, I was able to count on him for support. Whether its cleaning out the chicken yard or assembling some new gadget I got (and couldnt for the life of me figure out how to put together), and even helping me with my computer skills (or lack thereof), Josh has been an enormous help. Two years later, Josh is still helping methis book would not be possible if it werent for his computer prowess. Thank you, Josh. If I had had children, I would want them to be just like Josh.
Introduction
T he Complete Book of Raw Food, Volume 1 was the book that many of us used as our go-to resource when we were getting acquainted with and developing our raw food lifestyles. It taught us what tools to use, how to set up a raw food kitchen and how to sprout greens. The contributors were (and are) prestigious raw food chefs from around the world; people who we looked to and learned from as we started out.
Now we are the next generation, and I look forward to the day when we will pass on the baton to those who will succeed us. The Complete Book of Raw Food, Volume 2 presents an all-new collection of the recipes we love to share; quick, simple, easy to make, and good for yourecipes that you can easily make as part of your daily life; and addresses new topics like GMOs, the importance of raw, living water, and much more.
Living in the real world, too often we find ourselves juggling multiple jobs, balancing family commitments, and somehow trying to find time for ourselves, all while trying to maintain healthy eating habits, and live a healthy and realistic lifestyle. Some of the contributors in this book are world-renowned chefs with raw restaurants or markets of their own, all of which help support our healthy lifestyles. Others support our healthy journey in different ways, such as acupuncture, permaculture, and herbalism. No matter what their background, all of the contributors in this book have carefully selected delicious, nutritious raw recipes that will make it easy to live the raw lifestyle.
While a healthy diet is vitally important, we are more than just the food we put in our mouths. We need to remember to not only eat healthy, but to live healthy. If you have unhealthy emotions and relationships, or an unhealthy work environment and lifestyle, eating organic heirloom vegetables will not be your savior. But when we change our diets and begin to take more care of what we put into our bodies, it becomes apparent what areas we need to work on to improve the rest of our lives. We can work together to learn what tools we need to have a better relationship with ourselves and others. Be discerning in what you put in your mouth; be discerning in what you let into your life.

Living a
Raw Lifestyle
T here are many benefits to the raw lifestyle, but you will come to find that we each have our own personal reasons for making the switch. When I attended the Institute of Integrative Nutrition (IIN) in New York, New York several years ago to become certified as a Holistic Healthcare Practitioner, my diet was already predominantly raw. During my studies at IIN we were introduced to many different eating styles including South Beach, Ayurvedic, Atkins, and, of course, raw. Although my diet was predominantly raw, I chose to eat the way we were being taught at the time. So if we were being taught Atkins, I would eat an Atkins diet. If we were being taught microbiotic, I would eat a microbiotic diet. However, I soon came to realize that these eating styles were diets , not lifestyles. The raw diet is a raw lifestyle . When I tried the other diets they made me physically sick. On the other hand, the raw lifestyle resonates down to my soul. When I eat this way I feel at peace, which is a gift that no money can buy. Once you begin to feel that peace in your heart and notice how your body works for you on a daily basis, you will come to understand the answer to the question, why raw foods?
Raw foods include fruits, vegetables, nuts, grains, and seeds that are uncooked. Because raw foods are never heated above 118F, they retain all of their nutrients, allowing your body to get the most out of your food.
While a raw diet is a lifestyle change, its much easier to follow than you may think. For me, a typical day starts with juicing wheatgrass in my Tribest Green Star juicer. Sometimes I also make a vegetable juice in my juicer and store it in a glass jar to drink throughout the day. For breakfast I also have a smoothie which I make in my Vitamix high-speed blender. Lunch usually consists of a salad of greens, sprouts, fermented sauerkraut, chopped vegetables, and a pt. Many times, I dont even eat dinner as I find that Im not hungry. Instead, I usually have a vegetable juice or watermelon juice in place of dinner. If I do feel like I need more than just a drink, I will have a handful of almonds or a few raw crackers. As you can see, my raw diet is really very simpleand yours can be, too!
