FOREWORD
I receive numerous cookbooks, nutrition books, health books, and medical textbooks to review frequently. If Im really honest, thats not the part of my job I typically enjoy.
While some photos or recipes in these books might be great, or Ill be impressed by the way a colleague communicates a health concept, I rarely feel that the new offerings will do much to help my patientshelp people like youget better health. I typically find books are lacking truly actionable tips or sufficient information to help readers customize advice. Not only is it not personal enough for different folks, but its typically not personal enough for the same reader to glean info thatll work for them throughout their week, month, and even lives. Essentially, most books dont help us simplify better nutrition (which includes quality, quantity, nutrient balance, and frequency) to help get better health from our food choices.
When Danny asked me to read his cookbook manuscript, I jumped at the opportunity. I wanted his recipes, tips, and stories for myself, and had a feeling I would want to share them with my patients, colleagues, and friends. The same way I dive into his magazine, Naturally, Danny Seo, I dove into the manuscript. I found myself laughing out loud starting at page one and appreciated his honesty (youve got to love an author who outright admits that hes not a cooking expert but, instead, teamed up with the best). Then, I began to read the recipes and so began the mouth-watering...
Danny and his cookbook team deliver recipesI made several within the first weeks of receiving this book, which, Ill be honest, never happens. I could go on about the better nutrition wins the recipes offer, but I wouldnt want to taint any of them with the its healthy or its good for you mentions that can deduct from excitement for and appreciation of their great taste. Of course the cookbook naturally includes Dannys tips, so youll not only enjoy a variety of great-tasting food, but you will also glean resource-saving advice, and likely have a laugh or two.
Im so glad you are reading this book. Im so glad that Danny created it for all of us. Read on and bite into better nutrition to experience just how delicious better health tastes. Sorry! I had to! Im a dietitian; its my professional obligation to at least once mention how your food choices can deliver the better health we all crave. Happily, to satisfy that craving, all you have to do is make any of these recipes. Now thats Better Nutrition, Simplified!

INTRODUCTION
Its confession time and here it is: I do not love to cook. Thats right, the cookbook you are holding was written by someone who would rather spend his time just about anywhere else but in the kitchen. And thats where we may see eye-to-eye: I dont love to cook, but I do love to eat really delicious food.
Its no different from how I feel about exercise. I do not love huffing and puffing on the treadmill, but I like the endorphin rush and euphoric feeling I get when Im done. And most of us find household chores like washing windows, scrubbing toilets, and vacuuming floors to be more drudgery than fun, right? But who doesnt like the end result: a clean, sparkling home?
But back to cooking...
I have friends who tell me they find pleasureeven joyin cooking at home. Lucky them. To me, cooking feels like a homework assignment: gathering the ingredients, hunting for the right tools, and then devoting time and energy to bringing all those elements together in an attempt to produce something that tastes good enough to justify the effort. Unfortunately the alternative isnt very appealing, either; a frozen organic burrito may be a timesaver, but the result is something less than palatable. So Ive resigned myself to cooking in order to ensure that what I eat is not only good but also good
