I want to dedicate this book to my daughter, Leila. Youve been the greatest blessing in my life. Even though youre only a toddler, you have contributed to this book enormously. Thank you for accompanying me on many trips to the grocery store, helping cook the recipes while sitting on our countertop, and most important, for being an honest and willing taste tester. Cheers to the memories weve made in our kitchen and to the lifetime of memories ahead of us. My life and heart have never been fuller. I love you, my little Leila bean!
Contents
Imagine waking up each morning with a strong and lean body, pliable joints, and a clear mind. How different would your life be? You would have energy to welcome the day and all it has to offer. Its important to realize that the food you eat can deliver these powerful benefits, allowing you to live up to your maximum potential. Life is too short to be sick, stressed, and inflamed.
Adopting a pescatarian diet is life changing. As a dietitian, I witness the benefits firsthand with my clients. This style of eating is slimming, is anti-inflammatory, and can protect your joints, brain, and heart from many ailments and degenerative diseases. This is what you will gain by reading and cooking from The Truly Healthy Pescatarian Cookbook.
I decided to write it because there has been a recent influx of clients who are asking for more fish recipes and more ways to eat plant-based meals. I dont think of myself as strictly a pescatarian, but I would describe myself as a plant- and fish-loving omnivore. I love fish. I cook and eat fish so often that the thought of writing a pescatarian cookbook was a no-brainer. To give you a taste of what to expect, the recipes in this book are plant-forward, fiber-rich, anti-inflammatory dishes that dont have too much sugar and contain a balance of foods from the land and sea.
Not a pescatarian? Dont worry, you dont have to be one to reap the benefits of this cookbook. I am excited to share these recipes because anyone can benefit from adapting this diet, whether you are already a pescatarian, an aspiring pescatarian, a vegetarian who wants to start including fish, or someone who eats everything. You dont even have to like fish, because I will show you some recipes that will change your mind. I love converting nonfish eaters into fish lovers! This book will help you navigate the sea to find a fish dish that you will love.
In this book, I will use the terms diet and lifestyle interchangeably. Many people think of a diet as something you go on and off of or something that is restrictiveit bullies the mind, always reminding you of the foods that are off-limits. When I use the term diet to describe the pescatarian diet, I want you to think of it not only as a way of eating but as a way of living. A lifestyle is something that is supported by behaviors, making the adopted changes easier to sustain for the long haul. It goes beyond your plate. It includes things like exercise, stress management, and self-care. I want to help you develop behaviors to make eating healthfully a no-brainer. No one deserves to be tormented by the diet mentality.
The content and recipes in this book will give you a new sense of well-being. In addition to the 75 mouthwatering and healthy recipes, you will learn about the pescatarian diet, how to turn your kitchen into a pescatarian haven, and how to find and maintain your healthy weight naturally. The Truly Healthy Pescatarian Cookbook is more than a compilation of recipesits a reservoir of knowledge to help change your mind-set about healthy eating and weight loss. What are you waiting for? Lets dive in!
