Introduction
You might be asking, What is a pescatarian? To put it briefly, its somebody who doesnt eat meat but does eat seafood.
As a pescatarian you can include fish and seafood in your meals however, all other meats and poultry are out. The term was coined in the early 1990s and its a combination of the Italian word, Pesce, which means fish, and vegetarian. So, pescatarians are basically vegetarians who also include fish and seafood to their diet. Many pescatarians also eat eggs and dairy too.
Seafood is a great choice for some variety in your diet. Its rich in protein, iron, zinc, omega-3 fatty acids, and vitamin D. Its also a healthy fat that can help prevent heart disease and stroke. If you combine it with plant-based foods like fresh vegetables, whole grains, and legumes (as well as olive oil), you will have a balanced diet that has everything your body needs to thrive. Try to choose wild-caught fish whenever possible and eat smaller portions of fish that are considered higher in contaminants like mercury.

(1) Smoked Salmon Scramble
A tasty, easy, and quick recipe thats very easy to make every morning! Its very nutritious and flavorful, rich in vitamins to cover all of your needs and keep you full for hours.
Yield:
Total Prep Time: 15 Minutes
List of Ingredients:
- 6 large eggs
- 2 tablespoons low-fat milk
- teaspoon salt
- teaspoon ground black pepper
- 1 tablespoon butter, unsalted
- 4 oz. chopped salmon, smoked
- Chopped fresh chives, for garnish (optional)
- Whole-wheat bread, for serving (optional)

How to Cook:
Combine the pepper, milk, eggs, and salt in a mixing bowl.
Melt the butter in an 8-inch skillet in low-medium heat.
When the butter has melted, add the egg mixture. As the eggs begin to set, using a spatula, gently push the eggs towards the center of the pan, forming soft, fluffy curds. Repeat until the eggs are nearly cooked through and no liquid remains, about 7 minutes. Turn off the heat.
Add in the smoked salmon, gently tossing around the pan. Sprinkle with chives (if using) before serving hot with whole-wheat toast (if using).
(2) Spicy Shrimp and Grits
A delicious and healthy quick recipe thats as full of protein as it is of taste!

Total Prep Time: 1 hour and 20 Minutes
List of Ingredients:
- 2 c. vegetable or fish broth
- c. quick cooking grits
- bunch green onions, chopped
- 1 clove garlic, minced
- teaspoon salt or to taste
- 1 tablespoon butter
- green bell pepper, diced
- lb. peeled shrimp, deveined
- 1 c. shredded sharp cheddar cheese, divided
- c. Monterey cheese, shredded
- teaspoon pepper or to taste
- can (from a 10 oz. can) diced tomatoes with green chilies

How to Cook:
Prepare a baking dish by greasing it with cooking spray.
Fill a saucepan halfway with broth and bring to a boil over high heat. Stir in the grits.
Reduce heat to medium-low and continue cooking it for another 1012 minutes. Stir often.
Simultaneously, place a skillet over a medium flame. Add butter and let it melt. Once butter is melted, add green pepper, green onions and garlic and saut until vegetables are slightly tender.
Add shrimp and stir. Once the shrimp are slightly cooked, add Monterey jack cheese, 2/3-c. cheddar cheese, tomatoes and pepper and stir. Turn off the heat. Transfer into the saucepan of grits. Mix well.
