NOT too many years ago, I was a new mom, more than sixty pounds heavier than I am today. I was working sixty hours a week, yet struggling financially because I was going through a divorce during an economic downturn. Worst of all, everything bad was happening at once, and I was completely overwhelmed. I was at rock bottom: depressed, confused, and feeling out of control with no idea how to find my way out.

Several years before everything came crashing down around me, I had been diagnosed with celiac disease. This was way before it was well known, and there were no gluten-free labels on products. When I first started eating gluten-free years ago, I relied on planning, as I had to eat naturally unprocessed foods to avoid gluten. As the years went by, more and more gluten-free packaged foods were coming onto the market. During this busy and stressful time of my life, I got away from eating natural foods, and I turned to the convenient, but highly processed gluten-free foods. They sure tasted great, but I had a feeling that the new gluten-free pizzas, muffins, and breads were the culprits behind my weight gain.
