Man, You Can Grill
A raging hot fire and huge slabs of meat go together like... guys and huge slabs of meat. But canned foods on the grill? Wont they explode? Or roll off? No, no, no... think for a minute: How do you perk up boring old chicken? You slather it in barbecue sauce, right? Well, thats where the can comes in. One of the best BBQ sauces weve ever tasted starts with a can of sloppy joe sauce. And every tailgater knows that the most kick-ass grilled kielbasa is doused with a can of beer. Canned soda makes a great marinade: It tenderizes meat and creates a glaze as the sugar caramelizes over the fire. And dont forget Beer-Can Chickenyoull get applause when you take a perfectly roasted whole chicken off the grill with an open beer can stuck up its... um... orifice. (The steaming beer keeps the bird moist.)
More typical canned foods work on the grill, too. Whole canned ham grills up perfectly. And wait til you taste a gooey grilled Tuna Melt Supreme.
With this book, you can grill up 50 healthy, great-tasting mealseach ready in minutes. Use the nutrient evaluations to help keep your fat intake to 30% of the total calories in your overall diet and to track your salt intake if youre restricting dietary sodium. Slabs of meat and canned foods do provide some fat and salt along with great taste, so plan your diet accordingly.
As for the cooking, just follow the recipes. Whether you own a tiny hibachi or a giant, mega-burner gas behemoth, well show you how to become king of the grill.
Playing with Fire
Grilling to perfection means grilling at the right temperature. Each recipe will tell you exactly how much heat you need. Before you throw that meat onto the pyre, check the temp by holding your hand 5" above the grill rack. How long can you keep it there? Just 1 second? That grill is smokin hot. Two seconds? Medium-hot. If you can stay put for 3 or 4 seconds, shes medium. If it takes you 5 seconds to move, shes medium-low. After 6 seconds, shes way lowcheck that shes still on.
If you use a charcoal grill, getting to that perfect temperature is a little more tricky than just twisting a propane knob to I NCINERATE . To tame the flames, you manage the airflow with the grill lid and vents. When you first spread out the glowing coals, youve got a raging inferno. For a medium-hot fire, close the lid and open all the vents. After 5 minutes, the fire will be medium-hot. For a medium fire, close the lid and only partly open the vents. For medium-low, close the lid and open the vents just a crack. To raise the temperature at any time, open the lid. The coals will also get hotter if you pile them close together. Likewise, to lower the temperature, spread the coals apart.
Beef
Smoky Joes Big, Spicy Burgers
15-oz can barbecue sloppy joe sauce

4-oz can sliced or chopped jalapeos, drained

1 lb extra-lean ground beef
Also: 1 egg, 1 Tbsp Worcestershire sauce, 6 hamburger buns
HOW TO MAKE IT: Fire up your grill to medium. Pour can of sloppy joe sauce into a big bowl. Mix in the jalapeos, egg, and Worcestershire sauce. Add the beef and mix some more. Squish the meat into 6 burgers, each no more than " thick. Slap em on the grill and close the lid (with the vents open). Grill until theyre done the way you like: 5 to 6 minutes per side for medium (160F on an instant-read thermometer) or 7 to 8 minutes per side for well-done (170F). If you like em rare or medium-rare, youre on your own. This is a Mens Health recipe, not a Mens Food Poisoning recipe. Toast the buns on the grill. Slather with the remaining can sloppy joe sauce. Slap on the burgers and your favorite fixins.

Weve rounded off all can sizes to the nearest ounce. So dont panic if a recipe calls for a 15-oz can but you can only find a 14 ouncer. Just grab that closest available size.
