O ne of the best things about smoking and grilling out is that you are choosing a very healthy way to cook your food. Its pretty awesome that grilling and smoking is a healthy method because the taste of your food is so good, you wont want to cook any other way. Having the right smoker and grill has made my summers so much better. In fact, I dont want for the summer. We cook out as often as possible in my house. And you probably will, too!

When you are choosing the meat you want to grill, go for round and loin cuts, choosing the select or choice type before you go for the prime. They will have less fat on them but you may still need to trim it when you are ready to cook it. Dont forget, you will need to use a rack so that the fat that is still on the meat will drip down and not gather underneath the meat. I prefer a little fat to be left on my meats. This will be your preference but the less fat you leave on it, the healthier it will be for you.

Vegetables sides are delicious when smoked and grilled, as well. Dont mistake your grill for just a meat cooker. Smoked celery, cucumbers, peppers and more will delight you and anyone you are feeding. Not only that, but fruits are great when they are grilled, too! This book contains several recipes that give you instructions on how to grill peaches, pineapples and more. Sugars that are in fruits will caramelize, creating an unbelievable flavor. Since you are using this method, those natural sugars will not be overwhelming and will help you stay on the healthier side, if that is your intention.

Dont neglect your grill basket. There are plenty of small foods you might want to grill or smoke, such as tomatoes, small peppers and little potatoes. So make sure you are taking advantage of your grill basket and skewers.

Choosing Your Grill/Smoker

Heres a few tips to choosing a good grill or smoker for your needs.

  • Type of fuel You can use propane, electric, charcoal, wood pellets or natural gas
  • Style There are many different colors and styles to choose from, including modern and traditional. Stainless steel is very popular.
  • Shops You can get grills from home improvement centers where the employees should be able to assist you in choosing what is best for you. You can also get grills from specialty stores that sell outdoor living and patio supplies. Mass merchandisers, hardware stores and department stores sell all types of grills. You can also look online for specific types.
  • Size You need to purchase a grill that has the right amount of cooking surface. The larger the grill, the more cooking space, the more people you will be able to feed. If its just you or you and one other person, avoid purchasing a huge grill. Its unnecessary and will take up a lot of space.
  • Features You can choose the grill based on what you want to cook as well as how much. If you cook hot dogs and hamburgers, you dont need specific features. If you cook elaborate meals, check out any extra features offered that will shorten the time or make it easier to add wood chips. For instance, there are grills that have additional eyes on the sides for cooking or portholes to allow you to see how your food is looking while it cooks.
  • Location Where are you going to use your grill? A small balcony? A backyard patio? Or in your kitchen? You can choose your grill based on where you will be using it. Too little space makes for uncomfortable grilling when you buy a grill thats too large for a small balcony.

Choosing the Best Meat

There are 14 different major cuts of beef. All in all, there are about 40 to choose from. How do you know what to choose? Heres a few tips on picking out the best meats.

  • Choose lean cuts of meat and if you purchase meat with plenty of fat still on it, trim it off before cooking.
  • When choosing poultry, the best are skinless chicken that is white meat and turkey or ground turkey breast.
  • For beef, choose tenderloin, T-bone steak, flank steak, sirloin, top loin and porterhouse. The less fat attached the better.
  • For pork, choose tenderloin and chops.
  • For birds, choose quail, pheasant and ostrich.
  • For lamb, always choose loins.
  • For veal, check for the most trimmed cut possible.
