Nothing says Christmas like the delicious scent of gingerbread. Spicy yet sweet, these cookies are a perfect balance of flavor. With dark molasses, cinnamon, and a pinch of salt, theyll keep you coming back for more. Their soft and chewy texture is just right for when you need a gingery burst of flavor and a little Yuletide spirit.
Makes 2 dozen cookies
1 cup granulated sugar
cup unsalted butter, at room temperature
cup dark molasses
1 large egg
1 teaspoon ground ginger
1 teaspoon ground cinnamon
2 teaspoons baking soda
teaspoon salt
2 cups all-purpose flour
cup coarse raw cane sugar, for rolling cookies
Preheat the oven to 350F. In a large bowl, cream the granulated sugar and butter together until light and fluffy. Add the molasses and egg and mix well. Add the ginger, cinnamon, baking soda, salt, and flour and mix until well combined.
Spoon out the dough into balls and form into 1-inch balls. Roll the balls of dough in the raw cane sugar and then place on an ungreased baking sheet. Give them room; they will spread out while baking.
Bake for 8 to 10 minutes, or until they are slightly puffy.
Christmas is a season not only of rejoicing but of reflection.
Winston Churchill
With a perfect balance of powdered sugar and almond essence, these cookies are crumbly and nutty and give you just what you want when you need a sweet treat with an almond flair. They are easy to make and will become one of your favorite cookies this season. Just be warned, you may end up with powdered sugar on your lips and fingers!
Makes 2 to 3 dozen
1 cups unsalted butter, at room temperature
cup powdered sugar, plus more for rolling
teaspoon salt
1 cups finely ground almonds
1 teaspoons almond extract
2 teaspoons pure vanilla extract
3 cups all-purpose flour, sifted
Preheat the oven to 325F. In a large bowl, combine the butter, powdered sugar, and salt and mix until well combined. Add the ground almonds and the almond and vanilla extracts and mix. Add the flour gradually and continue to mix until a crumb mixture begins to form.
