AUTOIMMUNE DISEASE is an epidemic in our society, affecting an estimated 50 million Americans. There are more than 100 confirmed autoimmune diseasessome of the most common being Graves disease, Hashimotos thyroiditis, lupus, rheumatoid arthritis, multiple sclerosis, Sjgrens syndrome, alopecia, psoriasis, ulcerative colitis, Crohns disease, and type 1 diabetes. All autoimmune diseases have the same root cause: Our immune system, which is supposed to protect us from pathogens, turns against us and attacks our own proteins, cells, and tissues. The specific tissues attacked determine which autoimmune disease you have. These conditions are chronic and lifelong and many come with debilitating symptoms that can rob us of our quality of life. Genetics account for about one third of our risk for autoimmune disease; the rest comes from environmental exposureslike infection, toxins, and pollutantsdiet, and lifestyle.
The good news: Immune function is very sensitive to diet and lifestyle choices. That means, with the right diet and lifestyle choices, we can modulate the immune system to increase immunoregulatory processes in the body with the net effect of reducing the inflammation and targeted immune attacks on our tissues that drive autoimmune disease. What are the right diet and lifestyle choices to mitigate autoimmune disease? The answer is the recommendations of the Autoimmune Protocol, or AIP. The Autoimmune Protocol is a template for selecting foods and prioritizing lifestyle factors to maximize the therapeutic potential of our day-to-day choices. Each facet is supported by scientific evidence, making the AIP a valuable complementary approach to chronic disease management. In a 2017 clinical trial in patients with Inflammatory Bowel Disease, 73 percent of participants were in full clinical remission after following the protocol for only six weeks, and they experienced continued improvement over the entire course of the study.
The Autoimmune Protocol focuses on providing the body with the nutritional resources required for immune regulation and tissue healing while removing inflammatory stimuli from both diet and lifestyle. The AIP diet provides balanced and complete nutrition while avoiding processed and refined foods and empty calories. The immune system requires a vast array of nutrients to function properly, which is why the AIP diet homes in on the most nutrient-dense whole foods available in the food supplyincluding seafood, organ meat, and at least eight servings of vegetables per day. However, the food on our plate isnt the only input to health. The AIP lifestyle encourages sufficient sleep, stress management, and activity, as these are also important immune modulators, both directly and indirectly, for example by affecting gut health. Together, the diet and lifestyle guidelines of the Autoimmune Protocol support a healthy gut, including a diverse gut microbiome, hormone regulation, and immune regulation, all essential for lifelong health and wellness.

CHAPTER ONE
GETTING STARTED ON THE AIP DIET
THE FOOD WE EAT fuels our bodies and affects every function from our metabolism to our immunity. If we consume food that is less than healthy, over time, our bodies will begin to feel the effects of it and not function optimally. On the other hand, if we fuel ourselves with the best, most nutrient-dense food we can afford, our bodies will feel the difference almost immediately.
The idea of using nutrition to support our health isnt new, but functional medicine is starting to show us that food can be a powerful tool in controlling, and even possibly reversing, chronic illness.
HOW DOES THE AUTOIMMUNE PROTOCOL WORK?
The Autoimmune Protocol, also known as AIP, is an elimination-reintroduction diet designed to stop and reverse autoimmune disease by: * lowering systemic inflammation in the body; * repairing the gastrointestinal tract; * improving digestion and nutrient absorption; * rebalancing hormones; and * determining food sensitivities. The AIP diet is a functional diet that works on the core mechanisms of autoimmune illness.
WHAT IS AN AUTOIMMUNE DISEASE?
Autoimmune disease occurs when the immune system, which is designed to protect the body from outside invaders (viruses, parasites, etc.), starts attacking itself. The human bodys production of autoantibodies, immune proteins that mistakenly attack a persons own tissues, is a naturally occurring process and, under normal circumstances, the body has a system in place to clean them up and get rid of them. However, in the case of autoimmune disease, this cleanup process is broken.
The autoantibodies multiply and start attacking more and more cells within the body, creating damage and corresponding physical symptoms that cant be ignored. The tissues (or organs) being attacked determine which autoimmune condition is at play. To date, over 100 autoimmune diseases have been identified and many more unidentified conditions and illnesses are suspected to be autoimmune related. Moreover, if you have one autoimmune illness, you are at a higher risk for developing another. For an autoimmune disease to develop, a combination of factors needs to be present: 1. Genetic predisposition 2.
Environmental factors (bacterial and viral infections, toxins, pollutants, chemicals, heavy metals, etc.) 3. Poor diet and lifestyle, leading to critical nutrient deficiency, gut dysbiosis (when microorganisms living in the gut are out of balance), and intestinal permeability (leaky gut) The science of epigenetics suggests that while we cant change our genes, it is within our power to change the expression of those genes through lifestyle and dietary modifications. Working on removing toxins and harmful chemicals from our daily lives is an important piece of the puzzle, as is addressing infections known to be linked to autoimmune disease with the help of a knowledgeable doctor. But by far the easiest and most immediate impact we can make on our health and well-being is through the food we eat (and dont eat)!
