INTRODUCTION
There is something so soothing about cradling a warm mug in the palm of your hands, letting the warmth sink in whilst you have a chat with a friend or snuggle up on the sofa. Now imagine that the content of the mug is not liquid but one of your favorite cake! Heaven, or as we call it...a Mug Cake!
The beauty of Mug Cakes is their universality. They suit all kinds of diets. Perfect for vegans, vegetarians and indeed everyone else who fancies a mug of deliciousness. Their overwhelming advantage is the time they take to make: no more than 5 minutes in the microwave.
The ingredients are simple and easy to source, as a matter of fact, you probably already have the basic ingredients in your pantry. The difficulty will probably be to decide which recipe to prepare!
MUG CAKE BASICS
THE MUG
Although there are many commercial cups specifically designed for mug cakes, some of which are very attractive indeed, there is no need for a specific container. Any ceramic mug will do a great job, as long as is it microwave proof. The ideal size is 400 ml, as it leaves enough room for all the ingredients and allows the cake to rise.
THE MICROWAVE
Who would have thought that you could mix some basic ingredients in a mug, throw it in the microwave for a few minutes and be presented with a deliciously moist and yummy cake!
It goes without saying that all microwaves heat differently. This means you may need a little trial and error to get it right, but believe us when we say it will be so worth it!
The timings in this cookbook are simply a guide, but you may find you will need to alter the cooking time when making your mug cake at home. Our best advice is to keep a close eye on your cake. If the cake seems too dry, give it 10-20 seconds less next time you make a cake, or if it is too wet, pop it back in the micro and heat for 10-20 seconds more.
INGREDIENTS
Non-Dairy Milks
All the recipes in this book use ingredients beneficial to your health such as non-dairy milk. When the first addition of this book came out, you were lucky to find a soy milk in a local shop. Now these are so readily available in supermarkets you can choose from an incredible range. This is due to not only the increasing number of people sensitive to cow or goat milk, but also, because non-dairy milk has intrinsic advantages.
For example, almond milk contains no cholesterol or saturated fat, it's high in healthy fats (such as omega fatty acids, typically found in fish), which helps to prevent high blood pressure and heart disease.
For our Love Vegan mug cake recipes, we have used ingredients suitable for vegans, vegetarians as well as health conscious individuals. You should consider replacing dairy milk with almond, soy, and coconut milk if you are looking to improve your diet.
Choice of Flour
Flour is often something we take for granted. A tasteless ingredient which we tend to oversee. Flour is flour. Well, not exactly. Each type of flour you use has a unique composition and baking properties. Keep in mind it's never a good idea to substitute flours.
Coconut flour, for example, because it's not a grain-based flour, is very low in carbohydrates and high in fibers. You will find that the recipes using coconut flour call for about half the amount of traditional flour, this is because a tablespoon only will go a long way.
