Preface to Fourth Edition of Fat-Back & Molasses January, 1989

This Fourth Edition of Fat-Back & Molasses is dedicated to the people of Newfoundland and Labrador wherever they may live on planet earth. Since the First Edition in 1974, Fat-Back & Molasses has found its way into more than 100,000 homes of Newfoundlanders on the island and around the world.

Fat-Back & Mollasses is more than a cookbook. Certainly its recipes bring an array of foods into combinations that tantalize the critical gourmet and everyday family appetites alikebut the books success has also been enhanced by the beautiful culture it reflects. It mirrors an image of a people whose pristine character has been carved from four centuries of living on the Rock. The delightful names of their recipes and the colour of their humour reveal a people whose imagination is still very much alive and in communion with nature and the joy of life.

Fat-Back & Molasses is an authentic part of Newfoundland and Labrador. If you have not visited Canadas newest province, then read this book flrst for the pleasure of meeting your most easterly neighbours, then enjoy some of its recipes. It is the next best thing to visiting Newfoundland and Labrador and sharing in the experience of one of the shining jewels in the fabric of Canadian culture.

This book would not have been possible, but for three things. The first is the love that I have received from the people themselves of Newfoundland and Labrador. During the past six years residence in this province as a clergyman, many doors of all denominations have been opened to me. In the homes the white table cloth has always been placed with respect and the table set with friendliness. The meals prepared have been garnished with experience and unequaled in flavour. Out of this hospitable background has grown my first inspiration to capture on paper how the Newfoundland and Labrador women have triumphed in the kitchen.

My second debt is primarily to the United Church Women from many of the smaller communities of Newfoundland and Labrador. Through their co-operation and welcome support most of the recipes found in this book have come. I am also indebted to a small mimeographed booklet entitled The Labrador Cookbook for a few of the enclosed recipes. This latter publication was edited by some community spirited people to raise money to send some of their children on an exchange visit to other provinces. Their failure to put their names on the publication speaks even more highly of their dedication.

My third indebtedness is to my daughter, Lorie, who drew the seasonal sketches of outport Newfoundland when she was twelve years old. Each of them were familiar scenes on Fogo Island that made a deep imprint in her mind as the seasons rolled by. Fortunately for me, she was able to sketch on paper the rich pageantry of the outport life.
