A mochi is a Japanese dessert which is made of very glutinous rice. The rice is made into a paste form and then shaped in the desired way. Mochi in Japan is made in a traditional ceremony which is known as mochitsuki. This mochi is not only eaten at New Years Eve or during the New Year times but it is so common it is eaten all year long.

The traditional method of preparing the mochi was done by soaking the rice overnight and then steaming it. The steamed rice was then mashed by a traditional equipment that the Japanese had. They had to continuously mash and stir the mixture with 2 people alternatively performing this task very carefully. The mashed rice was then served and eaten immediately.

The modern preparation of mochi is comparatively easy and simple as no special equipment is required to finish this job. It can be easily done with utensils you have at home. The modern method involves preparing the mochi from the flour of sweet rice. The flour is mixed with the water and baking powder and then kept in the microwave for as long as it takes to set. It might take up to 2 minutes or sometimes may take more time. The sticky dough is removed from the microwave oven and allowed to set.

The next step depends upon the person making the mochi; you may want to roll out this mochi from the microwave oven and dust with potato starch to eat plain and simple or you may wish to make it fancier and tastier by making a nice filling to go with it.

There are various kinds of fillings that can be made to go along with this Japanese mochi. For instance, it can be filled with either a cream cheese filling, or a dark chocolate filling, Nutella chocolate filling, raspberry jam filling, strawberry jam filling, chocolate chip filling, butter filling, whole strawberry filling, a nice filling of cheese or it can be served plain as well. Traditionally, mochi was served just by itself which is the most basic preparation.

This easy mochi is a lovely Japanese snack for New Years Eve and it is a wonderful, sweet and chewy dessert.

Preparation time: 3 hours 35 minutes.

Makes: 8 servings.

Ingredients:

  • Sweetened red bean paste- 1 cup
  • Sweet rice flour, mochiko- 1 cup
  • Green tea powder, matcha- 1 teaspoon
  • Water- 1 cup
  • White sugar- cup
  • Cornstarch for rolling the dough- cup


Directions:

Wrap the sweetened red bean paste and freeze it for 3 hours.

Mix the sweet rice flour and the green tea powder in a bowl.

Add the water and the white sugar.

Mix the ingredients until smooth.

Cover with plastic wrap.

Cook this mixture in the microwave oven for at least 3 minutes.

Remove red bean paste from the freezer and divide into 8 equal balls.

Dust surface with cornstarch and while the mochi is hot from the oven, start making balls the size of one tablespoons.

Flatten the mochi and add in the red bean paste in the center; then, enclose the mochi so as to completely cover the paste.

Sprinkle the mochi with some more cornstarch to prevent sticking.

Recipe 02: Microwave Mochi


This mochi can be easily made in the microwave. It is sweet and tempting.

Preparation time: 15 minutes

Makes: 25 servings

Ingredients:

  • Mochiko- 1 cups
  • White sugar- 1 cup
  • Water- 1 cups
  • Distilled white vinegar- 2 drops
  • Potato starch- cup
  • White sugar- cup
  • Salt- teaspoon


Directions:

Take a bowl and mix in the mochiko, white sugar and the water until they are mixed well.

Now add the vinegar drops to soften the mixture.

Put the bowl in the microwave for about 8 to 10 minutes on high heat.

Remove and let it cool.

In another bowl add in the potato starch, sugar and salt and mix.

Cut the mochi into pieces with the knife and roll them in the potato starch mixture.

Recipe 03: Ono Butter Mochi


This is a Hawaiian recipe for mochi and is made with butter and coconut with a base of rice. This dessert is great for all kinds of tropical parties.

Preparation time: 1 hour 15 minutes

Makes: 12 servings

Ingredients:

  • Mochiko- 1 pound
  • White sugar- 2 cups
  • Baking powder- 1 teaspoons
  • Melted butter- cup
  • Milk- 3 cups
  • Eggs- 5
  • Vanilla extract- 1 teaspoon
  • Sweetened flaked coconut- 1 cup


Directions:

Preheat your oven to 350 degrees F.

Take a bowl and add in the eggs, milk and the vanilla extract; whisk together.

In another bowl combine the dry Ingredients: rice flour, sugar and the baking powder.

Mix the dry and the wet ingredients until well combined.

Now mix in the melted butter and the flaked coconut.

Pour into prepared baking dish and put in the oven to bake.

Bake for an hour, cut into squares and serve.

Recipe 04: Chi Chi Dango Mochi


This recipe of chi chi dango mochi is a traditional Japanese dessert. It is soft and chewy and great for picnics and parties.

Preparation time: 1 hour 36 minutes

Makes: 36 servings

Ingredients:

  • Mochiko- 1 pound
  • White sugar- 2 cups
  • Baking powder- 1 teaspoon
  • Water- 2 cups
  • Vanilla extract- 1 teaspoon
  • Coconut milk- 1 can
  • Red food color- teaspoon
  • Potato starch- 1 cups


Directions:

Preheat your oven to 350 degrees F.

Mix together the rice flour, sugar and the baking powder.

In another bowl add in the water, coconut milk, vanilla and the red food coloring.
