Pad Thai

Chicken:
2 tablespoons peanut oil
1.5 lb. chicken thigh
Vegetables:

Sauce:
1/4 cup tamarind paste
3 tablespoons soy sauce
1/4 cup brown sugar
2 tablespoons lime juice
1/4 cup fish sauce
Instructions:
1. Cook the pasta according to instructions, drain, and set aside.
2. Mix the sauce ingredients and set aside.
3. Heat the wok to medium and add two tablespoons of oil. Cook the chicken until done and set aside.
4. Add more oil and saut the bell peppers until soft.
5. Add the red pepper flakes, garlic, and bean sprouts. Saut for a few minutes and push them to the sides of the wok. Add the eggs in the center, scramble, and mix with veggies.
6. Add the rice and chicken. Pour the sauce and toss to combine.
Thai sweet chili ribs

1/3 cup sweet chili sauce
1 tablespoon red curry paste
1 tablespoon fish sauce

1/4 cup peanut butter
1 tablespoon red curry paste
1 tablespoon fish sauce
1 tablespoon rice vinegar
Ribs:
5-6 pounds pork ribs, skin removed
1 tablespoon cilantro, chopped
2 tablespoons roasted peanuts, chopped
Instructions:
1. Mix the marinade ingredients and cover the meat. Leave it overnight in the fridge or for 30 minutes.
2. To prepare the sauce, combine everything over medium heat and cook for 3 minutes.
3. Cook in your slow cooker. It will take from 6 to 8 hours.
4. Place on a baking sheet and cover with half of the sauce. Broil for 4 minutes. Serve along with the remaining sauce.
