Whats up Veggie MOB! Welcome to the second MOB Kitchen book, jammed full of the most delicious vegetarian meals youll ever munch. All for under a tenner. All using the freshest ingredients. Same old MOB, veggie-style. Producing a solely veggie book has been a dream of mine since I started MOB Kitchen. As the MOB has grown, there has been an undeniable enthusiasm surrounding our vegetarian dishes, and it is clear that the people are taking up increasingly meat-free diets.
I am a firm believer in vegetarian dishes being as tasty if not tastier than many meat dishes the thousands of veggie MOB recipe recreations that you send to us really shows this. MOB Kitchen is committed to being sustainable. The food industry has come under a lot of scrutiny regarding waste and climate change, and we want the MOB Veggie cookbook to help promote a change in peoples eating habits, whether they are vegetarian or not. At MOB Kitchen, we are determined to do our bit for the environment and with this book, we hope you will be able to as well. With meat-based agriculture accounting for 14.5% of greenhouse gases, it is essential that we cut our meat intake because this is the most significant way in which you can do your bit in preventing climate change. So why not help save our planet while eating delicious food? While planning and testing the recipes for this book, I realized how easy it is to take up a vegetarian or vegan diet simply by making some clever food swaps.
For example, switching your honey for maple syrup or agave. Your butter for veggie margarine. Yogurt for coconut yogurt. Dairy milk for oat milk. And so on. The meat-free products industry is evolving and expanding rapidly, and so making these switches is both easy and affordable.
With still nearly 800 battery farms in the UK and a continued need to cut down on meat intake, it is time to change the status quo for veggie dishes. People need to be enthusiastic about vegetarian recipes and start to move away from a predominantly meat-based diet. And with that in mind, this book contains both vegetarian and vegan dishes that are as good, if not better, than their meat-based counterparts. We have introduced the wonderful meaty jackfruit that can be bought in a can and makes the Mighty Jackfruit Curry feel so rich you wouldnt even know that its vegan. Discovering this fruit has opened my eyes to a world of simple, meaty textured vegan dishes and theres no looking back! Tofu can be equally as meaty and our Black Pepper Tofu is insanely good. There are also our Big Boy Bhaji Burgers, a classic from the MOB not the predictable bean burger that appears on burger menus as the vegetarian option this beast goes down an absolute treat.

We use a wide variety of cheeses in the book that are all available as vegetarian-style, so where you see manchego, Parmesan, feta, Gouda, halloumi, mozzarella, goats cheese, pecorino, cream cheese and Cheddar listed, check first that its veggie! The Vegetarian Society is an excellent resource for double checking that your ingredients dont contain traces of animal product and they even give some producers their seal of approval with the VegSoc label. Make sure you check ingredients like mustards, condiments or curry pastes, too, which sometimes include honey or fish sauce. Keep your eyes peeled for new options.
