My earliest memories of baking stem back to when I was about four or five years old. Wearing an oversized apron, I would assist my mom with holiday desserts, birthday cakes, and chocolate chip cookies to have on hand just for fun. I always kept a notebook nearby, in which I would (pretend to) write down the recipe as we went. Cracking the eggs and helping my mom hold the hand mixer as we beat the batter were always my primary responsibilities. I now know that these experiences were so special not only because of the delicious result that came out of the oven but also because of the memories created right alongside the sweet treats.

As I got older, I continued to bakealthough the recipes that I gravitated toward changed over time. In my early to mid-20s, I immersed myself in nutrition and health, and I became curious about the foods that worked best for my body. I eventually realized that the ingredients that I was accustomed to cooking and baking (gluten and dairy, specifically) were the root cause of my fatigue, digestive problems, and skin issues. I became certified as a holistic health coach, and I learned much more about the power of eating whole, real foods. I would spend the weekends experimenting in my kitchen, creating recipes comprised of those ingredients that better served me. I have realized that a few changes in my diet dont need to stop me from doing (and eating) what I love. Baking remains one of my favorite pastimes, an activity that gets me in the flow. For me, it is a hands-on sensory experience where time passes effortlessly.

I understand that many people share my story. Due to certain food allergies or intolerances, you may have felt forced into making a difficult dietary shift. As with any change, there can be an element of uncertainty. With dietary changes in particular (given that food and the way we eat can be deeply ingrained in childhood and tradition), perhaps there is a fear of missing out on those foods you know and enjoy. That is why I am so excited to share these recipes with you! They are proof that you can now bake delicious food similar to the traditional treats you have enjoyed in the past while staying aligned with your dietary needs and preferences.

Whatever your motivation for wanting to further explore a gluten-free and vegan way of eating, the fact that you are here is something to be celebrated! I hope that rather than feeling deprived, you approach these recipes from a mind-set of abundance. Also know that even if you have not strictly adhered to a gluten-free or vegan diet, I am confident you will still enjoy these baked goods. Either way, my ultimate hope is that you make these recipes in the same way they were created: with presence, pleasure, celebration, and love.

As you re-create the baked goods I am sharing with you in your own kitchen, what takes shape is not just a tasty, sweet treat in one form or another but food that will forever be a part of a memory, whether that is a cake you make for a family members birthday, the cookies you prepare for your childs annual bake sale, or the pie you bring to a backyard barbecue. It is my promise to you that the ingredients will not sacrifice flavor; better yet, they yield creations that support your health as well. Therefore, you can rest assured that these delicious and nutritious baked goods will serve you both physically and emotionally.

CELEBRATING OPTIONS!

These days, it is nearly impossible to separate food from feeling. Food is just as much a part of a celebratory time as the friends and family who gather around the table. Baking specifically is a modality meant for the more emotional side of life. We not only bake to eat, we also bake to preserve tradition, stir nostalgia, and cultivate joy.

I believe that our society is undergoing a shift in awareness around the food we eat and how it affects us. Not only is a plant-based way of eating becoming more common, but more people are also starting to realize that what you put in your body matters and that food is information for your cells. The hang-up when it comes to baking, however, is that many of the traditional ingredients used (conventional flours, refined sugar, dairy milk, and eggs) either are not tolerated by some people or are not included in a vegan diet. If either of these dietary restrictions applies to you, know that this does not mean you must forgo your favorite baked goods.
