When I wrote
The 20/20 Diet
, I had no idea it was going
to inspire so many people to kick-start a healthy-eating
lifestyle. I shared my story about losing 20 kilos in 20 weeks
and, as a nutritionist, I was able to explain why our bodies
hold weight and how we can take action to prevent weight
gain, promote weight loss and keep our bodies in balance.
The 20/20 Diet
also had a few recipes to get people started,
but I was completely blown away by the number of people
who contacted me and told me how much they loved the
recipes and that they wanted
lots more
, especially ones for
veggos and vegans and people with lactose intolerance,
coeliac disease, fructose malabsorption and food allergies.
So thats why Ive written
The 20/20 Diet Cookbook to give
you loads of new recipe ideas for using wholefoods that are
super high in nutrients and super low in allergens, with no
table sugar, no wheat, no gluten and very little dairy.
Theres something for everyone in here. It doesnt matter what
your dietary needs are, you will be able to find recipes that tick
all of your boxes. Plus Ive given you plenty of suggestions to
help you tweak ingredients to suit your taste.
My goal as a nutritionist is to inspire people to be the
best version of themselves that they can be. And if this book
becomes a tool for you to become healthier and to help you to
feel your best then I will be over the moon!
My experience is both professional and also very personal.
Ive battled weight problems on both sides of the spectrum.
Ive been overweight and Ive also been extremely underweight
to the point where I was seriously damaging my health.
The 20/20 Diet enabled me to find the perfect balance and
to nourish every element of my being: physically, mentally,
emotionally and spiritually. This is the best Ive ever felt and
I am keen to spread the message to as many people as I can!
Now, Im not going to lie to you. Cooking my 20/20 recipes
takes a bit of effort at first. If youre not already into clean
wholefoods, youre going to have to give your pantry a bit of a
makeover. But eating clean doesnt mean living off rabbit food;
its about real foods that are as close to their natural state as
possible the stuff your body thrives on: veggies, nuts, seeds,
fruits, fish, organic meats and eggs. But forget the packet stuff

reading the label feels like youre in chemistry class, then put it
down. Think real foods and youre set.
The best place to buy real food is at your local farmers
market, because youre not only getting your hands on the
freshest seasonal produce, but also supporting your local
economy
and
helping to reduce your carbon footprint. Of
course, not everyone can get to a farmers market, so dont feel
guilty if you cant. Your local greengrocer will probably source
local produce anyway, and most supermarkets are now labelling
produce so you know where its come from, as well as offering
plenty of organic options and cage-free animal products.
(Buying organic, ethical food means you get to vote with your
dollar, and every one does make a difference.)
Cooking my 20/20 recipes also means you need to be
willing to step outside your comfort zone. You may not have
heard of quinoa, chia seeds or stevia or made veggie chips or
cooked with coconut oil. But thats all part of the fun! Im like a
nutty professor in the kitchen thats how Ive come up with
some of my most awesome creations.
In the following chapters, I will give you some tips on
organising your pantry and fridge, and then well get straight
into the recipes.
Ill give you the tools, so all you need is the sheer
determination to achieve whatever your health goal may be.
It might simply be to quit sugar, or to lose five kilos, or to stop
drinking caffeine. Whatever it is, Im here to tell you that you
can
do it, and that even if you do fall off the wagon (and you
probably will), the real success is getting up the next day and
jumping back on. I know you can do this, you know you can
do this, otherwise you wouldnt have read this much of the
book. So nows the time; start now, this second, all it takes is
a decision.
