Indian Raita

Ingredients
1 tablespoon ground cumin
1 cup yogurt
1 tablespoon chopped green onions
1 cup chopped cucumber
1 tablespoon ground coriander
2 handfuls chopped cilantro
Instructions
1. Congregate all your ingredients into a big bowl.
2. Stir well.
3. Serve and enjoy.
No Yeast Naan

1. Preheat a griddle to 423 degrees F.
2. Mix the yogurt, 30ml warm water, and baking powder in a bowl.
3. Keep aside.
4. Add the mixture, flours, salt, baking soda, and remaining warm water in a bowl. Mix well to make a smooth dough.
5. Cut out the dough into pieces, roll them out to form flat shapes.
6. Add a sprinkle of the garlic and Nigella seeds on the flat dough.
7. Roll the dough again to stick the garlic and seeds to the dough well.
8. Place the dough on the griddle and cook both sides till done.
9. Smear the butter on the naan.
10. Serve.
Curried Cauliflower Soup
Preparation Time: 10 Minutes

Ingredients
1 minced garlic clove
1 diced onion
1 teaspoon oil
1 tablespoon curry powder
1 teaspoon ground turmeric
1 pinch grated ginger
6 tablespoons chicken broth
1 teaspoon ground cumin
6 ounces coconut milk
1 pound crumbled cauliflower
6 ounces diced tomatoes
1 tablespoon pepper
1 tablespoon salt
Instructions
1. Saut the onion in a pan of oil.
2. Cook for 3 minutes.
3. Add in the cumin, ginger, garlic, curry, and turmeric. Cook for 1 minute.
4. Add in the tomatoes, coconut milk, cauliflower, and broth.
5. Cook for 15 minutes and allow simmering.
6. Transfer this mixture into a blender.
7. Blend well till smooth.
8. Serve.
Watermelon Juice
Preparation Time: 05 Minutes

Ingredients
6 cups deseeded chopped watermelon
1 tablespoon sabja seeds (soaked, rinsed, drained)
2 tablespoons lemon juice
Instructions
1. Blend the watermelon and lemon juice.
2. Serve into glasses filled with ice cubes.
3. Garnish with the sabja seeds.
Jal Jeera Mojito

3. Add the ice and vodka.
4. Stir well.

Coconut Butter Cauliflower
Preparation Time: 10 Minutes

Ingredients
1 tablespoon salt
1 tablespoon pepper
1 cup coconut milk
1 tablespoon olive oil
1 teaspoon curry powder
1 chopped cauliflower head
1 grated ginger
2 minced garlic cloves
1 pinch turmeric
1 teaspoon garam masala
1 handful chopped yellow onion
1 handful chopped cilantro
1 tablespoon coconut oil
3 ounces tomato paste
1 pinch cayenne pepper
Instructions
1. Preheat the oven to 422 degrees F.
2. Spray a baking sheet.
3. Toss in the part of the garlic, part of the ginger, part of the coconut milk, cauliflower, and salt in a bowl. Allow marinating.
4. Layer this mixture on the sheet.
5. Bake 4 minutes.
6. Saut onion in a pan of oil.
7. Add the onion and the remaining ginger and garlic.
8. Cook for 4 minutes before adding the cayenne, garam masala, turmeric, curry powder.
9. Add the remaining coconut milk and paste.
10. Cook till you have a thick sauce.
11. Then add in the coconut oil and the cauliflower mixture.
12. Add in the pepper, cilantro, and salt. Serve and enjoy.
Indian Lassi

2 cups Greek yogurt
1 teaspoon salt
2 handfuls ice cubes
1 pinch cardamom
Instructions
1. Have your ingredients tossed in a blender.
2. Blend well. Serve.
