Indian cuisine combines a variety of characteristics, techniques and ingredients, from its own history as well as from their neighboring countries.
The people of Indian have many different ethnicities and backgrounds. This is actually reflected in their cuisine.
Common ingredients you will find in much of Indian cooking includes meats, potatoes, which are popular in various regions, along with garlic, chilies, peppers, cumin, coriander and tomatoes. Youll enjoy the wide variety of unique tastes. So let's get cooking!
1. Nihari
Slow-cooked meat in a delicious spiced stew is what makes Nihari one of the most popular dishes all over Pakistan. Enjoy with warm Tandoori Roti!
Makes: 4 servings
Cooking + Prep Time: 1 hour
Ingredients:
- 1 lb. lamb shank, cut into 2 inch pieces
- 2 tbsp. Nihari Masala (homemade or store bought)
- 2 tbsp. pure ghee
- 2 medium onions, sliced and deep-fried till golden brown
- inch ginger, cut into thin strips
- 2 tbsp. whole-wheat flour
- Salt to taste
- 1 tbsp. lemon juice
- 2 tbsp. chopped fresh cilantro leaves
- Water
- Nihari Masala (optional, you can use store bought as well) -
- 2 tbsp. cumin seeds
- 2 tbsp. fennel seeds
- 6-8 whole dried red chilies
- 1 tbsp. cloves
- 3 green cardamoms
- 1 black cardamoms
- 12-15 black peppercorns
- 2-3 tbsp. poppy seeds
- 1 bay leaves
- 1 blade of mace
- 1 tbsp. dried ginger powder
- 1 tbsp. nutmeg powder
- 2-3 cinnamon sticks
- 2-3 tbsp. split chickpea powder
Instructions:
Heat the ghee in a pressure cooker. Add the lamb and masala (see recipe below). Saut for a couple mins.
Add a quarter gallon of water and cook in a pressure cooker till the pressure is released eight times (eight whistles). This may take about half an hour.
Remove the lid when the pressure has completely reduced and transfer the contents to a wok. Bring to a boil, stir in the fried onions and half the ginger and simmer for two minutes.
In a small bowl, combine the whole-wheat flour with six tbsp. of water and mix well till smooth.
Add to the lamb mixture and continue to simmer till the gravy thickens.
Add salt and stir in the lemon juice.
To serve, garnish with the ginger and chopped cilantro leaves!
Nihari Masala:
To make the nihari masala, roast all the ingredients in a frying pan till fragrant. Remove from heat and cool.
Once cooled, blitz to a fine powder and store in an airtight container for use.
2. Aloo Tikki
This delicious potato crisps are a great way to start off any dinner or even as quick snacks for cold evenings!
Makes: 8 pieces
Cooking + Prep Time: 1 hour
Ingredients:
- 2 lb. potatoes
- 2 hardboiled eggs
- 4 green chilies
- cup fresh cilantro, chopped
- 1 medium onion, finely chopped
- 1 tsp black pepper powder
- 1 tsp cumin powder
- Salt to taste
- 1 cup breadcrumbs
- 1 egg
- Oil
Instructions:
Thoroughly rinse the potatoes and boil with skins on until soft. Remove from water and allow to cool slightly before removing skins.
Mash the potatoes and the hardboiled until smooth and free of lumps. Add the chilies, cilantro, onion and spices. Season according to taste. Combine evenly. Once combined, allow to chill for 15-20 minutes before forming the patties.
Beat the egg in a bowl and place the breadcrumbs in another. To form the patties, place about 2 tbsp. of the potato mixture into your palm and roll into a ball shape. Flatten to form a thick disk. Dip into egg and coat with the breadcrumbs.
Do this with the rest of the potato mixture until all your patties have been formed. Deep fry on low heat until golden brown. Drain on a paper towel. Serve warm and enjoy!
3. Fresh Lime Soda (Nimbu Ka Sharbat)
A popular drink in India the fresh lime soda! To get ginger juice, place grated ginger in your garlic press and squeeze out the juice.
Makes: 4 servings
Cooking + Prep Time: 10 minutes
Ingredients:
- 2 tbsp. ginger juice
- 4 tsp. sugar
- 14 tsp. black salt
- 1 tsp. fresh lime juice
- 4 cans lime soda
- Ice cubes
- Thin lemon slices, for garnish
Instructions:
Add all the ingredients except the lemon slices to your blender; blend well. Lastly, serve immediately, garnished with thin lemon slices.
