Fenugreek flatbread (Methi Thepala)

Fenugreek flatbread also known as Methi Thepala in India is a variation of flatbread from Gujarat. Mostly eaten with sugar & milk tea, pickle or curd, for a different kind of taste you can spread jam inside it and make a roll of it.

Whole wheat flour

1 cups + some more for dusting

Red chili powder

1 teaspoon

Coriander powder

1 teaspoon

Cumin powder

1 teaspoon

Turmeric powder

teaspoon

Carom seeds

teaspoon, optional

Salt

to taste

Fenugreek leaves

cup, plucked, measured, washed and then chopped

Green chilies

2 small, chopped finely

Ginger paste

1 teaspoon

Oil

3 tablespoons + more for frying the flatbreads

Its very easy to make it. Lets find out

  • Take flour with spices (red chili powder, turmeric powder, coriander powder, cumin powder,
  • carom seeds) and salt in a bowl.

  • Add green chilies, ginger paste, fenugreek/methi leaves and oil.
  • Mix it with your fingertips and it has crumbly looking texture.
  • Now add little water a time and knead into semi soft dough. It should not be too hard or too soft.
  • Cover it and keep it aside for only 15 minutes. Not more than that otherwise fenugreek leaves

    keep leaving water and dough will become very soft and sticky.

  • After 15 minutes, make the dough once again. Divide it into equal smooth balls and flatten it out
  • between your palms.

  • Now heat the pan or skillet on medium heat to fry flatbreads.
  • And other side start rolling the flatbread. Take one flatten ball, dip it into dry flour, roll it into
  • 4 inch diameter thin circle using rolling pin and rolling board.

  • By that time pan should be hot enough. Place rolled flatbread on hot pan. Let it cook for 30-40
  • seconds or till you get few bubbles on the top.

  • Then flip it with help of spatula. Drizzle some oil and spread it evenly on it.
  • Again flip the flatbread and press it lightly with spatula and cook till it down side is cooked
  • and you won't see any doughy part.

  • Also apply some more oil on up side and flip and cook again with pressing.
  • Once cooked on both sides remove it to the insulated container.

Tip - In order to stop flatbread become soggy put a paper towel at the bottom of the container, so it

will absorb the water

Spinach flatbread (Palak Paratha)

Spinach flatbread also known as Palak Paratha in India another variation of flatbread or Paratha in which different stuffings are added to make it delicious in case you dont like spinach. It can be served with curd, ketchup or pickle. Spinach flatbread is one of the healthy breakfast to start your day.

200 grams or 1 cups grated or crumbled

Its very easy to make it. Lets find out

  • Add spinach leaves inside the boiled water and cook for 2-3 minutes. Immediately drain it
  • and run the cold water over it to stop cooking process. Grind this spinach with ginger,

    garlic, green chili into smooth paste.

  • Take flour, salt and sesame seeds in a bowl. Add oil and spinach puree.
  • Mix it with hand and make a dough of it. Add little water if needed at a time to make
  • smooth and soft flatbread dough.

  • Keep it covered for 13 to 15 minutes.
  • Meanwhile make stuffing. Mix all the stuffing ingredients and divide into various
  • equal portions.

  • After 15 minutes, knead the dough again, divide into balls and flatten it out.
  • Work with one ball at a time. Dip into dry flour, roll into 5 inch diameter circle.
  • Put the stuffing into the center, gather the edges and pinch to seal it.
  • Lightly press it and flatten it out. Again dip into dry flour and roll into flatbread
  • Heat the skillet on medium heat to shallow fry the flatbread.
  • Once hot place rolled flatbread and fry the flatbread just like the regular flatbread.
