NATURES MEDICINE
Herbs and spices do so much more than flavor food. They have incredible anti-inflammatory benefits to help with autoimmune conditions, such as rheumatoid arthritis. Many herbs and spices have a long history of helping manage health conditions. Here are five of my favorites used in recipes throughout this book:
GINGER is an anti-inflammatory power-house! It inhibits the enzymes involved in the pro-inflammatory pathways and has been shown to have the same pharmacological effects as non-steroidal anti-inflammatory drugs (NSAIDs), such as aspirin and ibuprofen, without the negative side effects.
TURMERIC is an amazing spice that contains curcumin, a powerful natural chemical that helps decrease inflammation by inhibiting the enzymes of the pro-inflammatory pathways.
CINNAMON is a warm flavor that adds a nice sweet spice to food. It not only tastes great, but also helps reduce inflammation and manage blood sugar. You find this spice used in several recipes in this book.
CLOVES have one of the highest antioxidant levels of any spice. You dont need to use a lot to add good flavor to your food. I love grinding them fresh in a coffee grinder before adding to a recipe. The aroma is wonderful!
GARLIC has an incredible history and is used in many cultures all over the world. It has anti-inflammatory properties, is great for heart health, and supports the immune system to ward off pathogens such as viruses, bacteria, and parasites. You will find it used in many recipes in this book for its wonderful flavor and health benefits.

O ftentimes, people who go into the wellness or coaching fields are motivated to help others because of the difficult health issues they themselves have had to overcome. This was the case with both Caitlin Samson and myself. We met in graduate school where we were each pursuing our masters degree in clinical nutrition. Caitlin had successfully reversed her rheumatoid arthritis (RA) and I had made great strides in my own battle with Lyme Disease. I was immediately drawn to Caitlins sense of fortitude as someone who had not only conquered a chronic illness, but also used that struggle to fuel her way through a career in health and wellness. In fact, armed with her blended expertise in both nutrition and personal trainingand a whole lot of heartshe has even competed as an accomplished marathoner!
