Andis Favorite Recipes From Mom, with love Copyright 2017 Ann Aguirre All rights reserved. for andrea So you always have a taste of home. With thanks to my mom and grandmother, who first taught me about cooking. One cannot think well, love well, sleep well, if one has not dined well. Virginia Woolf PAsta salad 2 cups of rotini pasta 2 eggs 1 pepper (red, yellow, or green), chopped 2 thick slices of ham, cubed 1 cup of cheese, cubed Bit of grated onion cup of sweet relish cup grated carrot cup of diced celery Mayonnaise and vinaigrette to taste Put the uncooked pasta and eggs in the rice cooker. Cover pasta with water.
Start the cooker and start chopping your vegetables, ham, and cheese. Put in large container. When pasta and eggs are done, rinse and chill pasta. Peel eggs. Mix everything together well, add mayo & dressing until it tastes right. Mix again.
Chill and eat until gone. Tasty Banana bread (or cake!) 3 black & squishy bananas cup of honey 2 spoons of coconut oil, melted cup of plain yogurt 1 spoon of vanilla 1 egg 1 cups of flour 1 spoon of baking powder 1 spoon of baking soda 1 pinch of salt Mix all the wet ingredients together until the mixture is blended but lumpy. Add in the dry ingredients. Dont overmix. Grease cake or loaf bans (PAM baking spray works great!) and pour in the batter. Bake at 200C for about half an hour.
The bread or cake will be golden on top, darker around the edges, and will be pulling away from the pan. A toothpick should come out clean, too. Cut. Eat! Great with Lechera or whipped cream, ice cream is also fantastic. Or try it with Nutella! It will make a delicious quick breakfast or snack. Queso guisado 2 spoons of olive oil 3 fresh tomatoes, chopped 1 spicy pepper, diced 1 green pepper, chopped 1 small onion, diced or grated 1 small package of tomato sauce 1 package of panela (can sub Halloumi) cheese, cubed Garlic, cumin, hot sauce, salt and pepper to taste Put the oil in a medium saucepan.
Add onions first and saut them until theyre golden. Add the rest of the vegetables and simmer for twenty minutes or so on low heat, stirring occasionally. Add the spices, mix well, and then, finally, add the cheese to your stew. Cook only five minutes more and serve over rice or with warm tortillas. Yum, dinner! This is also delicious served over fried or scrambled eggs for a quick and tasty breakfast. fried ramen Open one pack of ramen.
Soften noodles for two minutes in a cup of hot water. Drain water. Add a little oil and saut noodles in a pan until crispy. Mix in part of the flavor packet to taste, add meat or vegetables, if desired. picadillo 1 pound of ground beef 3 ripe tomatoes, chopped 1 small box of chopped tomatoes or tomato puree 2 steamed potatoes, cubed 1 small onion, chopped 1 steamed carrot, cubed cup of frozen peas tsp of minced garlic or garlic powder tsp of cumin Salt and pepper to taste Dry chipotle pepper to taste / hot sauce to taste Put the potatoes and carrots in your rice cooker. Cover with water; turn on.
Steam veggies. Brown the ground beef in a large pan, add chopped onions when meat is half done. Keep browning until onions and meat are done. Mix in the steamed carrots and potatoes, add the frozen peas. Finally stir in the tomatoes, fresh and canned. Add spices.
If it looks a little dry, you can add a bit of water, not too much. Simmer this on low for about 15 minutes and youll have picadillo! Serve with sour cream, eat on tostadas, in tortillas, or on top of rice or even noodles. Always tasty! slow cooker irish stew 1 pound of stew meat, cubed 3 potatoes, chopped 2 carrots, chopped 1 onion, chopped 1 bottle of cheap beer 500 ml of beef broth or prepared beef bouillon 1 tsp of minced garlic To finish: 1 pack of instant potatoes Layer the meat and veggies in your crockpot. Add garlic. Pour in the beer and bouillon. Put lid on crockpot and cook for 7-8 hours on low, 3-4 hours on high, until meat and veggies are done.
Add salt and pepper and Worcestershire sauce to taste. Mix well. Stir in the instant potatoes, until the soup becomes a thick and hearty stew. This becomes more delicious by the day. Leftovers are so good! best ever mac & cheese 2 cups of elbow macaroni cup milk cup sour cream 1 cups cheese (cheddar, Monterrey jack, Manchegopick your favorite or use different kinds together that melt well!) Cover the macaroni with water in your rice cooker. Run rice cooker for about 15 minutes.
Most of the water should be absorbed. Drain off what isnt. Pour in the milk and cream. Add the cheese. Let the dish sit on warm for five minutes, mix again. Enjoy!! Tip: you can mix in ham or bacon for more protein or veggies for better nutrition.
You can also cook the pasta in chicken or vegetable broth for more flavor. This recipe is very versatile! It could easy be a one-pot tuna casserole, if you mix in a can of tuna, plus some peas and carrots. basic muffin recipe 2 cups flour c sugar 1 egg c oil 1 c milk 2 tsp baking powder Put all ingredients in a bowl. Mix until barely combined. Overmixing will make your muffins tough. You can personalize this basic muffin recipe many waysby using different types of sugar, oil, and milk.
You can also choose what to add in terms of nuts and fruits. (Add blueberries or chocolate chips. Add chopped apples and walnuts). Youll have fun experimenting and deciding which muffins are most delicious. This makes about twelve muffins! Bake for 15-20 minutes at 180C in a regular oven or 10-15 minutes in a toaster oven. You can probably bake two racks, six muffins each in your toaster oven.
Enjoy! Slow cooker ham & potato soup 1 pound of ham, cubed 4 potatoes, chopped 2 carrots, chopped 1 onion, chopped 1 liter of chicken broth or prepared bouillon To finish: 1 packet of instant potatoes Salt and pepper to taste 1 cup of sour cream 1 cup of shredded cheese Put the veggies and ham in the crockpot. (If you need to use less ingredients, thats fine. Just fill up your pot with what fits.) Cook on high for 4 hours or low for 8 hours. The veggies should be nice and soft when theyre done. The soup will look plain at this point. To make the yummy version stir in the instant potatoes.
That should thicken the soup. (Its not a bad idea to have extra instant potatoes on hand in case you need a bit more to make the soup heartier, but bear in mind that the soup will thicken as it cools, so if you add too much instant potato flake, the soup will be like mashed potatoes with random ham and veg.) Finally, add the cream and the cheese. Salt and pepper to taste. Serve with shredded cheese on top! strawberry cream cake 1 box of vanilla cake mix 1 carton of fresh strawberries One jar of berry jam 1 carton of whipped cream or Cool Whip (Oil, egg, milk, as directed by cake mix box) 1 tsp of vanilla Pam baking spray Make the cake according to box mix directions, but if it calls for water, use that much milk instead. The cake will be richer and more delicious. Spray two round 9 inch cake pans with Pam baking spray.
Divide up the cake mix. Wash and slice strawberries thin while cake is baking. (Follow directions on box for baking times and temperatures; you can use a normal oven or your toaster oven for cake.) Promptly remove cake pans from oven and tip them out on wax paper or cooling racks. The layer cakes will stick if theyre allowed to sit in the pan. Once the tiers cool to room temperature, spread jam on the bottom layer. Cover in cream.
Layer strawberry slices on top. Put second layer on top. Repeat cream and berry slices, be artistic! Serve with delicious coffee or tea, and impress your guests with this fancy-ass dessert.
Spagetti bake 1 pack of spaghetti 1 jar of sauce, flavor as desired pound of ground beef 1 green pepper, chopped 1 onion, chopped 2 cups of mozzarella or mixed shredded pizza cheese Boil water. Cook spaghetti properly. Al dente is best; the pasta doesnt need to be 100% done. Brown ground beef, drain fat.
