Dear Reader, I cant recall the first time I heard the word vegan , but I do remember reading about it. I had been eating a vegetarian diet for years, and I thought a vegan diet was too much. Wasnt giving up meat enough? Why should I give up dairy, cheese, and eggs too? My body gave me the answer: because I was diagnosed with IBS (Irritable Bowel Syndrome). I had experienced a lifetime of stomach issues, beginning with acid reflux in my childhood and evolving to gallbladder disease in my twenties. The gallbladder disease was easily cured through surgery, but I was flummoxed by IBS. Thats when my real journey into veganism began.
I call myself a secular vegan because I focus on the passion I feel for delicious vegan food and improved health and well-being, rather than on the rigid rules that some stick to when eating vegan. Whatever your reasons for learning about veganism, youve come to the right place! Breaking Down the Vegan Diet
Eating a vegan diet essentially means that you dont consume products made from animals. This includes meat such as beef, pork, poultry, and fish; animal-based dairy; and animal by-products such as gelatin.
Gelatin is a protein derived from the skin, cartilage, and/or bones of animals. That means any product that uses gelatin, such as marshmallows, is not considered vegan. However, more and more companies are removing gelatin from their products, so check labels as you shop. There are also great plant-based alternatives to gelatin, such as agar-agar, which is derived from red algae.
