1. Start with cold but not frozen patties and sprinkle on the Beef Rub and massage into both side of the patty.

Aromatic Smoked Duck Breast
Preparation Time: 15 minutes + marinate time

Ingredients :
Duck breast, 3 pounds
For Marinade
3 cups apple juice
1 tablespoon salt
1 and tablespoon sugar
2 tablespoons soy sauce
teaspoon paprika
teaspoon garlic powder
1 teaspoon dried basils
teaspoon pepper
Directions:
1. Add apple juice into a container and season with salt, sugar, soy sauce, paprika, garlic powder, dried basil, pepper and stir well
2. Score duck breast at several places and put breast into the marinade, marinate for 4 hours
3. Pre-heat your smoker to 325 degrees F, remove the breast from marinade and place in smoker
4. Smoke until the internal temperature reaches 325 degrees F

Smoked Quails
Preparation Time: 15 minutes + marinate time

Ingredients :
5 pounds quails
For Marinade
2 cups orange juice
1 cup of soy sauce
2 tablespoons garlic, minced
cup brown sugar
cup olive oil
1 tablespoon pepper
1 cup onion, chopped
Directions:
1. Add orange juice into a container and add soy sauce, garlic, brown sugar, olive oil, pepper, onion, and stir well
2. Add quails to container and toss well to coat
3. Cover the container with id and marinate quail for 3 hours
4. Marinate quails overnight
5. Pre-heat your Smoker to 225 degrees F
6. Add quails (breast side up) and smoke for 1 hour until internal temperature reaches 145 degrees F
7. Once done, remove and serve

Smoked Rabbit
Preparation Time: 15 minutes + 60 minutes marinating time

Ingredients :
1 cottontail, skinned and gutted
2 tablespoons salt
cup white vinegar
Water as needed
For Rub
1 tablespoon garlic powder
1 tablespoon cayenne pepper

1 bottle BBQ sauce
Directions:
1. Take a bowl and add in your kosher salt alongside the white vinegar to make your brine
2. Pour the brine over your rabbit using a shallow dish and add just enough water to cover up the whole of your rabbit
3. Let it sit for an hour
4. Pre-heat your smoker to a temperature of 200 degree
5. Take a bowl and whisk in the garlic powder, salt, pepper, and cayenne pepper to make the rubbing
6. Season the rabbit nicely
7. Toss your rabbit in your smoker and add in the hickory wood to your wood chamber
8. Let it smoke for two hours and keep adding wood pellets after every 15 minutes
9. Remove the rabbit from your smoker and serve hot

Cornish Game Hen
Preparation Time: 30 minutes
Cooking Time: 2 -3 hours
Ingredients :
2 Cornish Game Hens
Salt as needed
Fresh ground pepper as needed
1 cup quick-cooking seasoned browned rice
1 small onion, chopped
cup orange juice, squeezed
cup apricot jelly
Directions:
1. Pre-heat your smoker to 275 degrees Fahrenheit
2. Season the birds with pepper and salt
3. Take a small saucepan over low heat and add 2 tablespoons of butter melt the butter and stir in rice and onion
4. Stuff the hens with the rice mix and secure the legs with twine
5. Rinse the saucepan and put it back to low heat
6. Melt remaining 2 tablespoons of butter and stir in orange juice alongside apricot jelly
7. Whisk until smooth
8. Baste the hen with the jelly glaze
9. Transfer the birds to your smoker and smoke for 2-3 hours until the internal temperature reaches 170 degrees Fahrenheit
10. Brush with more jelly and enjoy it!

Baba Ghanoush

1 eggplant, halved lengthwise

Fancy Bologna

Ingredients :
2 tablespoons chili powder
2 tablespoons packed brown sugar
1 teaspoon ground coriander
1 teaspoon ground nutmeg
1 teaspoon garlic powder
5 pounds all-beef bologna club
cup homemade yellow mustard

Directions:
1. Pre-heat your smoker to 250 degrees Fahrenheit using your preferred wood
2. Take a small bowl and add chili powder, coriander, brown sugar, nutmeg, and garlic powder
3. Keep it on the side
4. Cut the bologna into inch slices and make few small cuts all around the edges of the slices
5. Coat both sides with the mustard mix
6. Season with salt, pepper and spice mix
7. Transfer the slices to smoker and smoke for 60 minutes. Enjoy!

Baked Peach Cobbler

4 teaspoons of butter, melted
2 pounds of peaches, sliced
cup maple syrup
1 cup flour, self-rising flour
3/4 teaspoon baking powder
1 pinch cinnamon
1 pinch salt
1/2 cup unsalted butter, cut into small cubes
1/2 cup white sugar
4 eggs
1/3 teaspoon vanilla
Directions:
1. Preheat the smoker grill at 220 degrees Fahrenheit until the smoke started to form. 2. Take a heatproof pan and coat it with melted butter.
3. In an aluminium pan, combine peaches along with maple syrup.
4. In a separate bowl, combine flour, baking powder, salt, and cinnamon.
5. In a small glass bowl mixed with sugar and butter, then add whisk eggs and vanilla into the butter.
6. Fold this mixture into the flour mixture.
7. Place the aluminium pan onto the smoker grill grate and cook 3 hours at 250 degrees Fahrenheit.
