Ingredients:

1 lb. of 1/4" sliced new potatoes, tiny
1/3 cup of leek, sliced thinly
Non-stick spray
3/4 cup of cooked ham, low sodium, low fat, chopped
3 oz. of 1/4 cubed Swiss cheese, reduced fat
1 1/4 cups of milk, fat-free
1 tbsp. of flour, all-purpose
3/4 cup of egg product, refrigerated or frozen thawed
1/2 tsp. of crushed thyme, dried
1/4 tsp. of pepper, black

Instructions:
1. Cook the potato slices in large, covered sauce pan in some lightly salted, boiling water for 10 minutes or so, till barely tender.
2. Add the leek during last five minutes of potato cooking and drain the mixture when potatoeshave become just tender.
3. Coat 2-qt. baking dish using non-stick spray. Place the potato mixture in the bottom of thedish. Sprinkle with ham and cheese.
4. Stir milk into flour in medium sized bowl till you have a smooth consistency. Add and stir egg product, pepper and thyme. Pour egg mixture on potato mixture.

1 lb. of sausage, pork
2 cups of Swiss cheese shreds
1/2 cup of cream, light
2 tbsp. of mustard
1/8 tsp. of pepper, ground
12 eggs, large

1. Preheat oven to 325F. Grease 13-inch x 9-inch casserole dish with butter. Set it aside.
2. Cook sausage in medium pan on med. Heat. Break meat up with fork till cooked and browned. Thoroughly drain sausage.
3. Place sausage in baking dish. Top with cheese.
4. Combine cream, pepper and mustard in small sized bowl. Beat with whisk. Pour 1/2 of mixture in baking dish atop cheese butter.
5. Beat eggs till they are frothy in medium sized bowl. Add to baking dish atop cream mixture.

6. Drizzle the rest of the cream mixture on the eggs. Dot with butter. Bake in 325F oven for
30-40 minutes. Casserole should be puffed and only starting to brown. Slice in squares and serve.

2. Combine the sausage, baking mix and following three ingredients in bowl. Make indentation in the middle.

3. Combine milk and egg. Add this to the dry ingredients and stir till barely moistened. Spoon the batter in muffin pans, 2/3 full. Bake in 375F oven for 18-20 minutes, till they are golden in color. Serve while warm.
