Ingredientspound of tomatillos, husked
cup of finely chopped cilantro
3 serranopeppers, stemsremoved and roughly
chopped
1 onion, chopped finely
1 tablespoon garlic, minced
The juice from 1 lime
1 tablespoon apple cider vinegar
Salt, to taste
Directions 1. Take a medium pot add the tomatillos and cover water. Heat over high heat until boiling.
2. Switch off the flame, and set aside to rest until slightly darkened. This will take around 5 minutes. Drain.
3. Add tomatillos to your blender. Pulse until a coarse pureis formed.
4. Add the vinegar, lime juice, onion, garlic, peppers, andcilantro to blender and pulse for 10 to 15 seconds.
5. Salt to taste and stir in well.6. Store in a lidded jar or empty bottle.
Homemade Tabasco Sauce
If you love store bought Tabasco Sauce, this homemade mixwill blow your mind.
Yields: 1 cups
Time: 10 mins.
Ingredients20 tabasco chilies, stems removed
tablespoons minced garlic
1 small onion finely sliced
teaspoon salt
1 teaspoon vegetable oil
2 cups water
1 cup distilled white vinegar
Directions1. Set your olive on over high heat. Add the garlic, peppersandonion, saut over 5 minutes or until the onion istranslucent.
2. Add the salt and the water, continue to cook for 15minutes, stirring occasionally.
3. Peppers should be soft, and the liquid should mostly haveevaporated.
4. Switch off the heat and allow to cool for 30 minutes.
5. Add to a food processor and puree until smooth.
6. Add the vinegar and blend for 5 seconds.
7. Season to taste with more salt, if necessary.
8. Strain through a mixture through a fine mesh sieve.
9. Store in a secure jar or bottle, with airtight lid for at least
2 weeks.
Hot Mango Sauce

Ingredients2 tablespoons oil
1 white onion, finely chopped
2 cloves garlic, finely chopped or minced
2 ripe mangoes, skinned, pitted and coarsely chopped
1 habanero chili, chopped finely
3 tablespoons honey
1 cup white wine vinegar
Salt, to taste
Directions 1. Set our oil on over medium heat. Add in your garlic andonions then cook for 3 minutes.
2. Add the mango and habanero, continue to cook for 5minutes, stirring frequently.
3. Add the honey and vinegar, turn heat to low and cook for12 minutes.
4. Transfer everything to a blender and pulse until smooth.
5. Strain the mixture through a fine-mesh sieve. Season with salt to taste.

Ingredients1 cup plain tonic water
1 Tbs. cornstarch
cup sugar
cup distilled white vinegar
tsp. salt
2 dried ghost chilies, stemmed and finely chopped
Directions1. In a 3-quart saucepan, whisk together the tonic water andcornstarch. Bring to a boil, whisking often. Sauce willthicken and become clearer. At this point, remove from heat.
2. Whisk in sugar.
3. Whisk in vinegar.
4. Whisk in salt.
5. Gently whisk in ghost chilies.
6. Chill and keep refrigerated.7. Use as needed

4 garlic cloves, minced
1 lb. of tomatoes, diced
1 cup distilled white vinegar
2 teaspoons salt
2 teaspoons sugar
Directions 1. Set your oil over medium heat.
2. Add the onion, peppers, habaneros and garlic, cook for 5minutes, stirring occasionally.
3. Reduce the heat to medium and add tomatoes, vinegar, saltand sugar. Cook, stirring occasionally, for 5 minutes.
4. Transfer to your food processor then process until smooth.
5. Strain the contents, using a fine mesh sieve, over amedium bowl and push out all the solids to extract all theliquid. Toss the solids and allow your sauce cool to roomtemperature.
