Cookies are something we all love, and some of us cannot live without cookies. Even when we are on a diet, we will manage a way out to make room for one cookie in our diet chart. Some of us even go super scientific and substitute every harmful ingredient with a nutritional component to make room for cookies in our lives. For example, for gluten-free diets, use coconut flour and almond flour. For diabetic people, use no sugar and fewer carbohydrates. The bottom line is, we need to have cookies regardless. Luckily, you can enjoy cookies now and then if you follow super quick, delicious, and healthy recipes like in this book.

Almond Date White Chocolate Cookies
When no bake cookies tastes so good, you would forget to bake your cookies anymore! The combination of almonds, white chocolate, and dates are just perfect.
Preparation Time: 30 minutes
Cooking Time: No Cooking Required
Serves: 10
Ingredients
Directions:
Add wax paper to a cookie sheet.
In a mixing bowl, combine the almond flour with the melted butter.
Mix until it is crumbly.
Add the date paste and white chocolate.
Mix well. Add the honey, vanilla extract, sea salt, and sesame seeds.
Mix well. Let it refrigerate in plastic wrap for 30 minutes.
Roll them out and cut them into a star shape. Let it refrigerate for some time and then serve.
Pecan Date Semolina Cookies
These semolina and date-based cookies are very soft and almost melt in your mouth. The pecan on top adds more texture and appeal to the cookies.
Preparation Time: 30 minutes
Cooking Time: 2 minutes
Serves: 10
Ingredients
10 pecans, toasted
1 cup semolina
2/3 cup date paste
1 pinch cardamom powder
1 pinch salt
1/4 cup butter
Directions:
In a pan, toss the semolina for 2 minutes over medium-low heat.
Take off the heat.
Add the butter to the semolina. Mix well.
Add the salt, cardamom powder and mix well.
Add the date paste and mix well.
Make little flat balls using your hands.
Add one pecan to each cookie.
Let them set for some time, and then they are ready to serve.
Almond Date Peanut Cookie Balls
These cookies come with a little surprise in the middle. With each bite, you find the tasty date paste and a nutty surprise in the middle.

Ingredients
Directions:
In a mixing bowl, combine the almond flour with granulated sugar and salt.
Add the butter and mix well.
Mix in the condense milk and knead into dough.
Let it rest for some time.
In another bowl, combine the date paste with cinnamon. Make 10 round balls.
Add one peanut and inside each date ball.
Now add another coating of almond flour mixture around the date ball.
They are ready to serve.
Semolina Milk Powder Cookies
