1. Aubergine chili with veggie
This hearty aubergine chili is low in fat and provides four of your daily five. Serve with brown rice and all the fixings for this smokey spicy meal. Joeys parents think hes their ticket to success. Just like that, this recipe is the ticket to a perfect aubergine chili.
Serving size: 4
Cooking time: 2 hours and 25 minutes
Ingredients:
Aubergine (1)
Rapeseed oil or use olive oil (1 tablespoon)
Diced onion (red) (1)
Diced carrots (2)
Green lentils or puy lentils (70 grams)
Kidney beans (400 grams can)
Soy sauce (dark) (3 tablespoons)
Tomatoes (chopped) (400 grams can)
Dark chocolate (finely chopped) (20 grams)
Chili powder (1/4 teaspoon)
Dried oregano (2 teaspoons)
Ground cumin (2 teaspoons)
Smoked paprika (sweet) (2 teaspoons)
Coriander (1 teaspoon)
Vegetable stock (800 milliliters)
Lime (1/2) and juiced (1/2)
For Serving
Brown rice (As desired)
Grated cheddar, tortilla chips, coriander (roughly chopped), sour cream or yogurt, avocado (mashed) (optional)
Instructions:
If you are using a gas hob, then place the aubergine gently on the lit ring in order to char. With help of kitchen tongs, turn the sides of aubergine occasionally until golden brown. On the other hand, you can also take help of a barbecue grill and heat it to its highest option. Cook the aubergine on the grill (make sure to turn the sides occasionally). Remember cooking on the grill would not end up in the same flavor. Set aside onto a plate for cooling and then gently peel the charred skin off. Make sure to remove the stem. Then roughly chop the aubergines flesh and place aside.
Inside a large sized pan, pour oil and heat it well. Then toss in the carrots, onion along with salt (a pinch of it). Fry the ingredients in the pan for about 15 to 20 minutes over low to medium flame. Make sure to cook until the carrots are tender.
Add in the lentils (both types), aubergine, kidney beans along with the liquid from its can, chili powder, tomatoes, soy sauce, spices and oregano. Stir well to combine completely and then place in the stock. Let it boil and then slow down the flame to low. Close the lid and let it cook for about 1 and half hour (make sure to stir it every 15 to 20 minutes in order to avoid it from burning).
Place the lid aside and let the prepared mixture to simmer for about 15 minutes over a medium flame. Keep in mind that the sauce should be thickened. Pour in the lime juice and add seasoning for taste. You can also add more salt for desired flavor. Serve hot along with the rice and your favorite accompaniments.
