Dedication to Grandma My Grandma is the epitome of a strong woman. She carried the family with her resilience, courage, and sacrifice. She formed the roots of my family, and taught the branches how to be family-oriented.

Not only did she shower us with love, but also love-filled home cooked meals. She remains the best chef I have ever known. I grew up watching her sell dinners from home in the community where I was raised. She taught me how to cook and inspired my vision of being a private chef. My meals and recipes are made with love, care and purpose just as my Grandma s meals were. I m sure she would be proud of her grandson s accomplishments as a Chef.

Disclaimer In this book you will get my personal vegan recipes that I have crafted and perfected over the years. I m a self- taught chef who does not strictly use measurements. I tried my best to give you accurate measurements to make the meals come out similar to mine. However, I often improvise and adjust seasonings according to serving size and the dietary needs of my clients. Therefore, I have no set measurements.

What you will find in this book is the foundation of the recipes to enable you to achieve (as close as possible), the same finished product that I achieve. So do not feel as if you have to strictly adhere to the recipes listed in this book. Have fun, be creative and feel free to add your own special touch to the dishes. Give your vegetables the same attention as you would decaying flesh (meat). Introduction At the time of this book s publishing, I am 32-year-old male, born and raised in Hollywood, FL.

The family I grew up in was very close-knit, and you could say that food was like the glue that bound us together beyond our blood relations. Every Sunday we would all meet at Grandma s house to cook and eat, and this was a traditional bonding experience for us. Our meals could be described as Southern-style soul food. And, what can I say, I loved it. I was a happy meat eater. But at age 23 I received a diagnosis that changed my life.

My Mom, a retired nurse, noticed that my feet were badly swollen for weeks. She checked my blood pressure and noted that my blood pressure was high. Soon, I was officially diagnosed. I was faced with a dilemma: either take the route of many of my family members and be put on high blood pressure medicine for life, or find an alternate approach. I did not want to take the pharmaceutical route, so I began to do intensive 8 | Vegan Vibes Vol.1 research on other options Shortly thereafter I discovered that these - photo 10

I realized that the kind of meals that I grew up eating soul food was detrimental to my long-term health. I knew then that if I continued to eat like my Mom and her mom and her mom I would develop the same underlying health issues. That just did not make sense to me. The very definition of insanity is doing the same thing over and over again and expecting different results. So, I decided to break the cycle. I changed my diet to vegan, and within 30 days, my health started to improve.

Specifically, clear skin, a sharper mind, body fat reduction and better bowel movements were what I noticed first. That was 8 years ago and I am still successfully cured of high blood pressure. My goal is that everyone who reads this book is free of the misconception that there are limited vegan food options. Whether you are a new vegan, an aspiring vegan or a veteran in the vegan game, know that you can still find mouth-watering and satisfying meal items. It is my hope that the recipes in this book will excite you and even inspire other creative meal ideas for you. 9 | Chef Mal
