Every year America honors Martin Luther King Jr., one of the USA's best-known Civil Rights leaders. Martin Luther King Jr. Day, which falls on the third Monday of January, is a celebration of his achievements and work on racial equality and ending racial segregation.
Apart from Reverend King, Abraham Lincoln and George Washington are the only other Americans whose birthdays are national holidays.
Food played a big part in fueling the Civil Rights movement. When four black college students sat down and ordered coffee at Woolworth's lunch counter in Greensboro, North Carolina, they sat there until the store closed and still didn't get any coffee.
But that day on Feb 1st in 1960 energized the Civil Rights movement, and later that year, Woolworth in Greensboro desegregated their lunch counter.
Martin Luther King's dream was to end hunger and poverty. And this is one of the reasons why on Martin Luther King Jr. Day, Americans are encouraged to dedicate the day to volunteering and help improve their communities.

1. Barbecue Ribs

These ribs might well be the very best you are ever likely to taste. So, celebrate your special occasion with a portion of Southern-style BBQ ribs.
Servings: 6
Total Time: 3hours 30mins
Ingredients:
  • 2 (2-3 pounds) slabs of St. Louis-style pork ribs, approx. 10 bones each
BBQ Dry Rub:
  • cup kosher salt
  • 3 tbsp black pepper
  • 2 tsp dried oregano
  • 2 tbsp each smoked paprika, chili powder, onion powder, garlic powder, brown sugar
  • 1 tsp cayenne pepper
BBQ Sauce:
  • 1 pounds grape tomatoes
  • 3 cups yellow onion (peeled and chopped)
  • 1 tsp garlic (peeled and minced)
  • 3 tbsp salted butter
  • cup packed light brown sugar
  • 1 cups white vinegar
  • cup yellow mustard
  • 2 tbsp Worcestershire sauce
  • 2 tsp kosher salt
  • 1 tsp black pepper
Directions:
Preheat the main oven to 350F. Pat the ribs dry on both sides with kitchen paper. With a sharp knife, remove the thin membrane from the back of each rib.
In a large ziplock bag for the dry rub, combine the kosher salt, black pepper, dried oregano, paprika, chili powder, onion powder, garlic powder, brown sugar, and cayenne. You should yield around 1 cups of dry rub.
Evenly divide the rub between the slabs, rubbing it onto both sides, use around cup. Press the rub gently onto the ribs to adhere.
Lay the ribs, meaty side facing upwards, on a wire rack set over a foil-lined baking sheet. Set aside to rest at room temperature for 25-35 minutes.
Bake the ribs in the oven for around 90 minutes, or until the meat pulls away easily for the bones but is not quite tender. Then, turn the oven temperature to 450F without removing the ribs from the oven.
In the meantime, prepare the BBQ sauce.
Heat a 12" frying pan or skillet over moderately high heat.
To the pan, add the tomatoes, and while frequently stirring, cook for 5-7 minutes, or until the skins begin to char and split.
Next, add the onion and garlic, and while frequently stirring, cook for 5 minutes.
Then add the butter and cook until melted, for approximately 60 seconds.
Add the brown sugar and stir until incorporated. Cook without disturbing for 2-3 minutes to allow the edges to caramelize.
Stir in the white vinegar, yellow mustard, Worcestershire sauce, salt, and black pepper. Turn the heat down to moderately low and cook until the tomatoes break down and the mixture is thickened slightly for around 40-45 minutes.
Remove the pan from the heat and transfer it to a food processor. Take out the centerpiece of the lid, and on high speed, process until nearly smooth, for around 60 seconds. As necessary, you will need to stop the processor from running to scrape down the sides. Allow the sauce to cool completely for about 30 minutes. You should yield approximately 4 cups of sauce.
Brush the ribs on both sides with 1 cup of sauce. Bake in the oven until caramelized and tender, for 35-45 minutes. Brush with a second cup of BBQ sauce halfway through cooking.
Remove the ribs from the oven and rest for a minimum of 10 minutes.
Serve the ribs with the remaining sauce and enjoy.
